Instant Pot® Almost Instant Rice Dinner

- 3 slices Bacon- cut up into pieces
- Coconut oil- couple of tablespoons
- Any leftover cooked meat – I had a pork chop left over from the night before, cut up into small pieces (my mother cannot chew large pieces)
- Leftover vegetables cut up – I had carrots and cabbage leftover from night before, but you can use any vegetable.
- Cut up red pepper
- 1 cup bruschetta- I purchase in jar from Costco and have it on hand
- 1 cup of rice- I used white rice
- 1 cup of water

1. Peel & cube Sweet Potatoes
- 6 Sweet Potatoes or Yams
- 3 Apples
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 1 tsp dried Sage (optional)
- 1 tsp Cinnamon
- 4 Tbsp Butter or Coconut Oil
- 1/4 cup Maple Syrup
- NOTE: for healthier version we use 1/2 cup water in place of oil & syrup.

- 2 1/2 cups all-purpose flour

- 1 Tbsp sugar

- 3-5 drops yellow food coloring

- 6-8 cups rolled oats
- 2 cups almond slices
- 1 cup sunflower seeds
- 1/2 cup flax meal, optional
- 1 tsp cinnamon
- 1/3 cup Maple syrup or honey
- 1/3 cup Coconut oil, melted
- 2 tsp Vanilla
- 1/4 cup water, optional--if needed

- Because it's made from ordinary sugar, you can make your own confectioners' sugar. All you need is a coffee grinder. Simply place some ordinary granulated sugar in the coffee grinder and pulse until it's a fine powder.
- 3 to sugar contains about 3 percent cornstarch to prevent it from clumping up, but if you're grinding your own and using it right away, clumping shouldn't be an issue.

- 1/2 lb pinto or white beans, soaked overnight in water
- 1 can “no salt added” tomato sauce (15oz)
- 2 1/2 tbsp soy sauce or gluten-free soy sauce (45g)
- 1 3/4 cup water or vegetable broth (420g)
- 2 tbsp apple cider vinegar (30g)
- 2 tsp minced garlic (10g)
- 1 tbsp molasses (blackstrap or regular) (15g)
