Mix together and bake in 2 9X9 pans for 25-30 minutes at 350 degrees
- 2 1/3 sticks margarine, melted
- 3/4 cup cocoa
- 2 cups sugar
- 4 eggs
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup nuts - optional
Tomatillo Gazpacho

1. Heat 1 T oil in a small nonstick skillet over medium heat
- 2 T extra-virgin olive oil
- 3 cloves garlic, chopped
- 1 English cucumber, halved lenthwise and seeded
- 1 avocado, halved and pitted
- 1 pound tomatillos, husks removed, chopped
- 1 green bell pepper, chopped
- 1-2 jalepeno peppers, seeded and chopped
- 1 15-oz. can reduced-sodium chicken broth or vegetable broth
- 1 tsp. sugar
- 1/4 tsp. salt
- 12 ounces cooked and peeled shrimp, chopped
- 1/4 cup green olives, chopped
- 2 scallions, sliced
Crab Bisque

1. In a heavy large pot over medium heat, heat the olive oil
- 2 tablespoons olive oil
- 3 cups coarsely chopped red bell peppers (about 2 large)
- 1 cup chopped green onions
- 1 cup coarsely chopped celery
- 2/3 cup coarsely chopped carrots
- 1/2 cup coarsely chopped red onion
- 2 teaspoon dried tarragon
- 1/4 teaspoon cayenne pepper
- 2-14 oz. cans diced peeled tomatoes in juice
- 3-8 oz. bottles clam juice
- 1 cup dry white wine
- 1 cup whipping cream
- 12 oz. crabmeat

- 2 pkg. yeast
- 1/4 c. warm water
- 1 1/2 c. scalded milk cooled down (or make with warm water and nonfat dry milk)
- 1/2 c sugar
- 1 tsp. nutmeg
- 1/4 tsp. cinnamon
- 2 eggs
- 1/4 c. shortening
- 2 c. flour

1. Cook bacon in a large skillet over medium heat until crisp, 5-7 minutes
- 2 slices bacon
- 1/2 cup thinly sliced shallots
- 3 cups sliced mixed mushrooms, such as oyster, shiitake and/or baby bella
- 4 ears corn, kernels cut from cob
- 1/4 cup water
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
Crabmeat Cakes With Mustard Sauce

1. Pulse the bread in a food processor to make coarse crumbs; spread out the crumbs on a sheet pan
- FOR THE CRAB CAKES
- 6 slices white bread, crusts removed
- 1 pound lump crabmeat, picked over for shells
- 1/2 cup mayonnaise
- 1 large egg yolk
- 1 stalk celery, finely chopped
- 3/4 cup finely chopped dill pickles
- 1 T unsalted butter, for frying
- 1 T olive oil, for frying
- FOR THE SAUCE
- 2 T unsalted butter
- 1 T all-purpose flour
- 2 tsp. curry powder
- 1 tsp. paprika
- 1/2 cup low-sodium chicken broth
- 1 cup milk
- 3 T whole-grain mustard
- 2 tsp. yellow mustard seeds

Grilled Asparagus Salad With Orange Vinaigrette

- 1 lb. fresh asparagus
- 1 tbsp. grated orange rind
- 1/4 c. fresh orange juice
- 1/3 c. olive oil
- 1/4 c. balsamic vinegar

- 1/2 tsp. salt
- 1/4 tsp. pepper
