Salted Nut Roll Bars

Preheat oven to 350 degrees
- For the Topping:
- 1 lb. peanut butter sandwich cookies - coarsely crumbled (I used Nutter Butter)
- 1 stick unsalted butter - melted
- 2 C. peanut butter chips
- 2/3 C. light corn syrup
- 4 T. unsalted butter
- 1 t. vanilla extract
- 2 C. miniature marshmallows
- 2 C. dry roasted peanuts
- 2 C. crisp rice cereal (Rice Krispies)
Ultimate Chocolate Milkshake

Combine all ingredients in food processor or blender and puree until smooth, scraping down sides as needed
- 3 c. vanilla ice cream cut into large chunks
- 1 1/2 c. chocolate sorbet cut into large chunks
- 1/2 c. whole milk
- 2 tbsp. hot fudge sauce at room temperature
Holiday Pomegranate Sparkle

Bend rosemary and drop into cocktail shaker
- Pomegranate Pre-Mix:
- 1 1/2 cups vodka
- 1/2 cup DeKuyper Pomegranate Pleasure (or Pomegranate liqueur)
- 3/4 cup fresh lemon juice
- 1 cup simple syrup
- To make the drinks:
- 1 sprig fresh rosemary
- 2 1/2-3 ounces Pomegranate Pre-Mix
- Splash of chilled brut Champagne or sparkling wine
Lemon Potatoes

Rinse cut potatoes under cold water tossing with hands (which helps wash off some of the starch), drain well
- 2 lbs. baby red potatoes, scrubbed and cut in half
- 2 garlic cloves, peeled and smashed, plus 2 cloves minced
- 1 1/2 tsp. grated lemon zest and 2 TB. fresh lemon juice
- 1 cup chicken broth
- 2 TB. olive oil
- 2 TB. chopped parsley

Combine ingredients, mixing until smooth
- 1 pkg. (8 oz.) cream cheese, softened
- 1/4 c. milk
- 1 pkg. (0.7 oz.) dry Italian salad dressing mix
7UP Pound Cake

1. Adjust oven rack to the lower-middle position and heat over to 300 degrees
- Glaze:
- 2 1/2 cups granulated sugar
- 5 large eggs, room temperature
- 1/2 cup 7UP, room temperature
- 1 T grated zest plus 2 T juice from 1 lemon
- 1 T grated zest plus 2 T juice from 2 limes
- 1/2 tsp. salt
- 20 T butter (2 1/2 sticks), melted and cooled slightly
- 3 1/4 cups cake flour
- 1 cup confectioner's sugar
- 1 T lemon juice
- 1 T lime juice

- 1 tsp. salt
- 3 tbsp. sugar
- 1/3 c. vinegar
- 1/2 tsp. celery seed

Poached Salmon With Creamy Piccata Sauce

Place salmon in a large skillet
- 1 lb. center-cut salmon fillet, skinned and cut into 4 portions
- 1 c. dry white wine, divided
- 2 tsp. extra-virgin olive oil
- 1 large shallot, minced
- 2 tbsp. lemon juice
- 4 tsp. capers, rinsed
- 1/4 c. reduced-fat sour cream
- 1/4 tsp. salt
- 1 tbsp. chopped fresh dill
Baby Spinach Salad With Tomato And Mozzarella

Alternate layers of spinach and tomato across plate
- 5 oz. baby spinach leaves
- 1 beefsteak tomato, cut thinly crosswise
- 1/2 c. fresh basil leaves, cut into thin strips
- 1/4 lb. part-skim mozzarella, diced
- 2 tsp. fresh oregano, chopped fine
- 2 tbsp. olive oil
- 2 tsp. balsamic vinegar
- kosher salt and ground black pepper to taste
