  • Lemon filling:
  • Graham cracker-coated pie shell
  • 1 1/4 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 6 tbsp. unsalted chilled butter, cut into 1/4 inch pieces
  • 4 tbsp. chilled all-vegetable shortening
  • 3-4 tbsp. cold water
  • 1/2 c. Graham cracker crumbs
  • 1 c. sugar
  • 1/4 c. cornstarch
  • 1/8 tsp. salt
  • 1 1/2 c. cold water
  • 6 large egg yolks
  • 1 tbsp. zest from 1 lemon
  • 1/2 c. juice from 2 or 3 lemons
  • 2 tbsp. unsalted butter
  • Meringue topping:
  • 1 tbsp. cornstarch
  • 1/4 tsp. cream of tartar
  • 1/2 c. sugar
  • 4 large egg whites
  • 1/2 tsp. vanilla extract

1. Place duck on a roasting rack in a roasting pan in a 350 degree oven for about 20 minutes per lb

  • 1 store bought duck (about 5 lbs.)
  • 3/4 cup duck fat
  • 3/4 cup flour
  • 1/2 cup okra, fresh or frozen

  • 2 cups onion, diced
  • 2 cups celery, diced
  • 1/2 cup Poblano pepper, diced
  • 2 quarts poultry stock

  • 1 Tbsp cayenne pepper (less if you're wimpy)
  • 1 tsp. black pepper
  • 1/2 lb. crawfish
  • 1/2 lb. Andouille or keilbasa sausage, sliced
  • 1 cup tomatoes, 1/4" dice
  • 4 cups cooked rice, set aside
