The Ultimate Lemon Meringue Pie

For the pie shell: Mix flour, salt, and sugar in food processor fitted with steel blade
- Lemon filling:
- Graham cracker-coated pie shell
- 1 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1 tbsp. sugar
- 6 tbsp. unsalted chilled butter, cut into 1/4 inch pieces
- 4 tbsp. chilled all-vegetable shortening
- 3-4 tbsp. cold water
- 1/2 c. Graham cracker crumbs
- 1 c. sugar
- 1/4 c. cornstarch
- 1/8 tsp. salt
- 1 1/2 c. cold water
- 6 large egg yolks
- 1 tbsp. zest from 1 lemon
- 1/2 c. juice from 2 or 3 lemons
- 2 tbsp. unsalted butter
- Meringue topping:
- 1 tbsp. cornstarch
- 1/4 tsp. cream of tartar
- 1/2 c. sugar
- 4 large egg whites
- 1/2 tsp. vanilla extract
Duck Gumbo

1. Place duck on a roasting rack in a roasting pan in a 350 degree oven for about 20 minutes per lb
- 1 store bought duck (about 5 lbs.)
- 3/4 cup duck fat
- 3/4 cup flour
- 1/2 cup okra, fresh or frozen
- 3 Tbsp garlic, minced
- 2 cups onion, diced
- 2 cups celery, diced
- 1/2 cup Poblano pepper, diced
- 2 quarts poultry stock
- 1/4 cup file powder
- 4 bay leaves
- 1 tsp. oregano
- 1 tsp. thyme
- Tabasco to taste (4-5 good shakes)
- 1/4 cup Worcestershire sauce
- 2 Tbsp salt
- 1 Tbsp cayenne pepper (less if you're wimpy)
- 1 tsp. black pepper
- 1/2 lb. crawfish
- 1/2 lb. Andouille or keilbasa sausage, sliced
- 1 cup tomatoes, 1/4" dice
- 4 cups cooked rice, set aside
Chilled Lobster and Texas Dewberry Coleslaw

1. Shred and julienne vegetables
- Dressing:
- 1/2 head green cabbage, shredded
- 1/2 head red cabbage, shredded
- 1 carrot, julienned (mandolin)
- 1 jicama, julienned
- 1 red onion, julienned
- 1 red bell pepper, julienned
- 2 lobster tails
- 1/4 cup lime juice
- 1/4 cup raspberry vinegar
- 1 cup sugar
- 2 Tbsp. garlic, minced
- 2 Tbsp. shallots, minced
- 2 pints dewberries, loganberries or blackberries
- 1/4 sunflower oil
- 1 tsp. salt
- 1/2 tsp. white pepper
6 Week Muffin Mix

Mix all items and seal overnight
- 1 quart buttermilk
- 4 eggs
- 1 cup vegetable oil
- 5 teaspoons of soda
- 2 teaspoons salt
- 3 *3 cups sugar (1/2 of that usually)
- 5 cups flour = (3 cups white, 3/4 c., 3/4 c. whole wheat)
- 1 15 ounce box of Raisen Bran cereal

Leeks Mimosa With Toasted Hazelnuts

Preheat oven to 400 degrees
- 6 large leeks (3 pounds), white and pale-green parts only, halved lengthwise and rinsed well
- Coarse salt and freshly ground pepper
- 2 large eggs
- 1 teaspoon Dijon mustard
- 2 teaspoons finely grated orange zest, plus more for garnish
- 3 tablespoons fresh orange juice
- 1 tablespoon fresh lemon juice
- 1 tablespoon minced shallot
- 3 tablespoons extra-virgin olive oil, plus more for brushing
- 1 ounce (1/4 cup) skinless hazelnuts, toasted and chopped
Mango Jalapeno Aeoli

- 1 bunch cilantro
- 1/2 cup Hudson's Mango Jalapeno Sauce
- 1 cup mayonnaise
- 2 cloves garlic
- 1 Tbsp. salt and pepper
Twice-Baked Potatoes With Greek Yogurt

Preheat oven to 375 degrees
- 4 russet potatoes (3 pounds), pricked all over with a fork
- 4 ounces (1 stick) unsalted butter
- 3/4 cup heavy cream
- 2 cups reduced-fat (2 percent) Greek yogurt, room temperature
- 2 tablespoons minced fresh chives, plus 2-inch pieces for garnish (optional)
- Coarse salt and freshly ground pepper
Basic Crepes

- 1 3/4 cups all-purpose flour
- 1/2 teaspoon coarse salt
- 2 cups whole milk, room temperature, plus more if needed
- 3 large eggs, room temperature
- 2 1/2 ounces (5 tablespoons) unsalted butter, melted, plus more for skillet
Ancho Paint

Combine the above in blender and puree until smooth
- 1/2 cup Ancho pepper puree (soak ancho peppers in hot water for 30 minutes and puree in blender)
- 2 lemons, juiced
- 6 cloves garlic
- 2 shallots
- 2 cups mayo
- 2 Tbsp. dark brown sugar
- 2 Tbsp. rice wine vinegar
- Salt to taste
