GROUND BEEF ENCHILADA CASSEROLE

Brown meat with onion. Cut up tortillas into small sections
- 1 lb ground beef
- 1 dozen corn tortillas
- 1 (6 ounce) can chopped black olives
- 1 (10 1/2 ounce) can cream of chicken soup
- 1 (10 1/2 ounce) can cream of mushroom soup
- 1 chopped onion
- 1 lb shredded cheddar cheese
- 1 (4 ounce) can diced green chilies
- 1 (10 1/2 ounce) can enchilada sauce
- sour cream, for garnish if desired
- salsa, for garnish if desired
- guacamole, if desired (to garnish)
LAYERED BEEF AND POTATO CASSEROLE

1. Heat oven to 350°. Spray 12x8 inch (2 qt) glass baking dish with cooking spray
- 1 lb lean ground beef
- 2 cups Green Giant frozen mixed vegetable
- 1 jar (12 oz) beef gravy
- 1/2 teaspoon salt
- 1 bag (28 oz) frozen potatoes O‘Brien with
- peppers and onions, thawed

- 1 cup light corn syrup
