ROAST BEEF SANDWICHES

Cut roast in half; transfer to a 5-qt
- 1 beef rump roast or bottom round roast (3 to 4 pounds)
- 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
- 1 envelope onion soup mix
- 2 celery rib, finely chopped
- 1 jar (6 ounces) sliced mushrooms, drained
- 15 kaiser rolls, split

- Combine:
- McIntosh Apples - cleaned, cored, sliced, and chopped
- 2 cups - Sugar
- 3 cups - Flour
- 1 tsp - Cinnamon
- 1 tsp - Baking Soda
- 2 tsp - Vanilla
- 3 - Eggs, mixed
- 1 1/4 cup - Oil
- 2 cups - Chopped apples
- 1 cup - Chopped Nuts
- 1 cup - Coconut
CHEESEBURGER PASTA

Cook pasta according to package directions
- 1-1/2 cups uncooked whole wheat penne pasta
- 3/4 pound ground beef
- 2 tablespoons finely chopped onion
- 1 can (14-1/2 ounces) no-salt-added diced tomatoes
- 2 tablespoons dill pickle relish
- 2 tablespoons prepared mustard
- 2 tablespoons ketchup
- 1 teaspoon steak seasoning
- 1/4 teaspoon seasoned salt
- 3/4 cup shredded reduced-fat cheddar cheese
- Chopped green onions, optional
FRENCH ONION SALISBURY STEAK

- 1 ¼ lb. ground chuck
- ¼ cup fresh minced parsley
- 2 Tbsp scallion, minced
- 1 tsp kosher salt
- ½ tsp black pepper
- 2 Tbsps all-purpose flour
- 1 Tbsp olive oil
- 2 cups onions, sliced
- 4 tsps Parmesan cheese, shredded
- 1 tsp sugar
- 1 Tbsp garlic, minced
- 1 Tbsp tomato paste
- 2 cups beef broth
- 1/4 cup dry red wine
- 3/4 tsp kosher salt
- 1/2 tsp dried thyme leaves
- 4 tsps minced fresh parsley
GRAPE AND BLUE CHEESE SALAD

In a large bowl, combine lettuce, radicchio, grapes, and onion
- 9 cups washed, crisped, bite-size pieces butter lettuce leaves (about 1-1/4 lbs) untrimmed
- 3 cups washed, crisped, bite-size pieces radicchio or red-leaf lettuce leaves (6-8 oz untrimmed)
- 1 cup small red seedless grapes
- 1/2 cup thinly sliced red onion
- 1/3 cup fruity extra-virgin olive oil
- 2 Tbsps berry vinegar (wine vinegar plus 1/4 tsp sugar)
- 2 Tbsps lemon juice
- 2 tsps Dijon mustard
- 2 tsps honey or sugar
- 1/2 tsp pepper
- 1/2 cup coarsely crumbled blue cheese

- 4 Tbsp juice from Kosher dill pickles
- 3 Tbsp finely chopped dill pickles
- 1/4 cup chopped parsley
- 1/2 cup chopped red onion
- 2 stalks celery, chopped
- 1 or 2 chopped scallions, including the greens
- 1-2 hard boiled eggs, chopped (optional)
- 1 medium carrot, finely chopped (optional)
- 1/2 cup mayonnaise
- 2 teaspoons Dijon mustard
- Kosher salt and freshly ground black pepper to taste

- 2 eggs, slightly beaten
- 2 tsp sugar
- 1 cup milk
- 1 cup sifted flour
- 1/4 tsp salt

HAM AND CHEESE QUICHE WITH HASH BROWN CRUST
