CREAMED PEAS AND CARROTS

Place carrots in a large saucepan; add 1 in
- 4 medium carrots, sliced
- 2 cups frozen peas
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup heavy whipping cream or half and half
- Optional: 1 clove garlic and 1 tbsp grated parmesan
APPLE-BALSAMIC PORK CHOPS

Sprinkle pork chops with salt and pepper
- 4 boneless pork loin chops (5 ounces each)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 teaspoons olive oil
- 1/4 cup apple cider or juice
- 1 cup reduced-sodium chicken broth
- 1/4 cup apple jelly
- 2 teaspoons balsamic vinegar
- 1 tablespoon butter

In a large bowl, beat first five ingredients until smooth
- 1 can (15 ounces) solid-pack pumpkin
- 1 can (12 ounces) evaporated milk
- 3 eggs
- 1 cup sugar
- 4 teaspoons pumpkin pie spice
- 1 package yellow cake mix (regular size)
- 3/4 cup butter, melted
- 1-1/2 cups chopped walnuts
- Vanilla ice cream or whipped cream
FINGERLING POTATOES WITH HERB VINAIGRETTE

Serves 6-8 Place potatoes in a medium pot and cover with cold water by about an inch
- 2 pounds fingerling potatoes, or small new potatoes, scrubbed and halved
- 1/4 cup lemon juice
- 1/3 cup extra virgin olive oil
- 1 teaspoon minced fresh thyme leaves
- 1 teaspoon minced fresh oregano leaves
- 1/2 teaspoon of Dijon mustard
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 red onion, thinly sliced
- 1/4 cup dry vermouth
- 1/4 cup chopped fresh parsley
BIG DADDY'S BARBECUE SAUCE

Mix all except soy, butter and smoke
- Ingredients:
- Yield: Makes about 2 1/4 cups
- 1 cup prepared yellow mustard
- 1/2 cup sugar
- 1/4 cup light brown sugar
- 3/4 cup cider vinegar
- 1/4 cup water
- 2 tablespoons chili powder
- 1 teaspoon black pepper
- 1 teaspoon white pepper
- 1/4 teaspoon cayenne
- 1/2 teaspoon soy sauce
- 2 tablespoons butter
- 1 tablespoon liquid smoke (hickory flavoring)
