HERB-RUBBED PORK CHOPS

In a small bowl, combine the parsley, marjoram, sage, garlic powder, salt and pepper
- 1 teaspoon dried parsley flakes
- 1 teaspoon dried marjoram
- 1 teaspoon rubbed sage
- 1/8 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 bone-in pork loin chops (3/4 inch thick and 6 ounces each)
- 1-1/2 teaspoons olive oil, divided
- 1/4 cup reduced-sodium chicken broth
- 2 tablespoons sherry or additional reduced-sodium chicken broth
APPLE CRUNCH PIE

Place rack in lowest position in oven; preheat oven to 425
- 1 (9 inch deep dish or 10 inch) unbaked pastry shell
- 1 (21 oz.) can Comstock Brand Apple Filling or Topping
- 1/2 cup cold margarine or butter
- 1 (14 oz.) can Eagle Brand Sweetened Condensed Milk (Not evaporated milk)
- 2 eggs
- 1 teaspoon maple flavoring
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/2 cup firmly packed light brown sugar
- 1/2 cup unsifted flour
- 1/4 cup granola, crushed

- Mango Salsa (Trader Joe’s)
- BBQ fish
- Cilantro
- Lettuce – Bag of Field Greens (or substitute sliced cabbage)
- Lemon juice
- Feta cheese
- Avocado

SLOW-COOKED BEANS

In a 5 quart slow cooker, gently combine all ingredients
- 4 cans (15 1/2 ounces each) great Northern beans, rinsed and drained
- 4 cans (15 ounces each) black beans, rinsed and drained
- 2 cans (15 ounces each) butter beans, rinsed and drained
- 2 1/4 cups barbecue sauce
- 2 1/4 cups salsa
- 3/4 cup packed brown sugar
- 1/2 to 1 tsp hot pepper sauce
MASHED POTATO CASSEROLE

Mix and put in casserole. Dot with butter and sprinkle with paprika Bake at 350 for 30-45 minutes
- 12 Medium potatoes, peel and boil with salt
- Drain and mash
- Add 1 cup sour cream
- 1 8 oz. package cream cheese
- Salt and pepper to taste
- Add garlic salt to taste.

In a medium saucepan, combine sugar, molasses, shortening and butter
- 1/2 cup sugar
- 1/2 cup mild-flavored molasses
- 1/4 cup shortening
- 1/4 cup butter
- 1 egg, beaten
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/2 tsp ground nutmeg
- 1/2 finely shredded orange peel
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/4 tsp ground cardamom
- 1/4 tsp ground cloves
- 2 1/2 cups all-purpose flour
BROILED GARLIC SHRIMP

Coat a foil-lined broiler-pan rack and 1 pound large peeled, deveined raw shrimp with garlic-flavor cooking spray
- 1 pound large peeled, deveined raw shrimp
- Garlic flavor cooking spray
- 1/2 cup Italian seasoned bread crumbs

- 6 ounces butterscotch morsels
- 1/2 cup peanut butter
- 3-1/2 cups Rice Krispies

MICROWAVE STRAWBERY JAM

A tiny pinch of finely ground black pepper added in step 1 can add some zing to the jam
- 2 1/2 cups hulled and quartered strawberries (from about 1 pound)
- 2 teaspoons orange zest
- 2 Tbsp lemon juice
- 1/2 cup sugar (can reduce to 1/4 cup if you would like your jam less sweet)
- An 8-cup Pyrex measuring cup OR a large microwave safe bowl (no metal)
SHRIMP WITH TOMATOES & FETA

In a large skillet, heat oil over medium-high heat
- 3 tablespoons olive oil
- 2 shallots, finely chopped
- 2 garlic cloves, minced
- 6 plum tomatoes, chopped
- 1/2 cup white wine or chicken broth
- 1 tablespoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 1/4 teaspoon sweet paprika
- 2 pounds uncooked large shrimp, peeled and deveined
- 2/3 cup crumbled feta cheese
- 2 teaspoons minced fresh mint
- Hot cooked rice
