SUGAR DREAM COOKIES

In a large mixing bowl, beat the butter with an electric mixer for 30 seconds
- 1/2 cup butter, softened
- 1/2 cup cooking oil
- 1 cup powdered sugar
- 1/2 cup granulated sugar
- 3/4 tsp baking soda
- 3/4 tsp cream of tartar
- 1/4 tsp salt
- 1 egg, lightly beaten
- 3/4 tsp vanilla
- 2 1/2 cups all-purpose flour
- 1/3 cup granulated sugar, coarse crystal sugar, or colored sugar
CHICKEN, CHORIZO AND TORTILLA STOUP (Stew-like Soup)

Preheat medium soup pot over medium-high heat
- 1 pound chicken tenders
- Salt and pepper
- 3/4 pound chorizo sausage, in packaged meats case near kielbasa
- 2 tablespoons extra-virgin olive oil
- 3 cloves garlic, smashed
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- 6 small red potatoes, diced
- 1 (15-ounce) can fire roasted chopped tomatoes (recommended: Muir Glen)
- 1 (15-ounce) can dark red kidney beans, drained
- 2 teaspoons hot sauce
- 1 quart chicken stock
- 1 sack red or blue corn tortilla chips
- 2 cups shredded pepper jack or smoked Cheddar
- Suggested garnishes: chopped scallions, chopped cilantro or fresh thyme leaves
BALSAMIC-GLAZED PORK CHOPS

Sprinkle pork chops with 1/2 teaspoon salt and pepper
- 4 boneless pork loin chops (6 ounces each)
- 3/4 teaspoon salt, divided
- 1/2 teaspoon pepper
- 3 tablespoons butter, divided
- 1 large red onion, halved and thinly sliced
- 2/3 cup balsamic vinegar
- 2 teaspoons brown sugar
- 1/2 teaspoon dried rosemary, crushed
SOUTHERN COMFORT SWEET POTATOES

Preheat oven to 350 degrees Place sweet potatoes in a large bowl
- 2 (29 oz) cans sweet potatoes, drained
- 1/2 cup butter, softened
- 1 tsp ground cinnamon
- 1/4 cup orange juice
- 3 eggs, beaten
- 1/4 tsp salt
- 1/4 cup Southern Comfort liqueur
- 1/4 cup chopped pecans
- 1/4 cup light brown sugar
BROCCOLI & CHEESE POTATO SOUP

In a large saucepan, combine the first seven ingredients; bring to a boil
- 3 cups cubed peeled potatoes
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 cups reduced-sodium chicken broth
- 1-3/4 cups water
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 3 cups frozen broccoli florets
- 3 tablespoons all-purpose flour
- 1/3 cup fat-free milk
- 1/2 cup shredded reduced-fat sharp cheddar cheese
- Minced fresh parsley
PECAN CRESCENTS

Beat butter, sugar and vanilla in large bowl with electric mixer until fluffy
- 1 cup butter at room temperature
- ½ cup powdered sugar
- 2 tsps vanilla
- 1 cup finely chopped pecans
- 1 ¾ cups all-purpose flour
CHOCOLATE ANGEL PIE

Combine pudding mix and cocoa in medium bowl
- FILLING:
- 1 pie single pie crust, baked at 425 for 10 to 15 minutes or until lightly browned.
- 1 package (4 oz) instant chocolate pudding mix
- 2 Tbsps cocoa
- 1 cup milk
- 1 container (8 oz) frozen non-dairy whipped topping, thawed
CINNAMON ROLL COOKIES

In a small bowl, mix brown sugar and cinnamon until blended
- GLAZE:
- 1/2 cup packed brown sugar
- 4 teaspoons ground cinnamon
- 1-1/4 cups butter, softened
- 4 ounces cream cheese, softened
- 1-1/2 cups sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons grated orange peel
- 4-1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon active dry yeast
- 1/2 teaspoon salt
- 1 cup confectioners' sugar
- 2 tablespoons 2% milk
- 1 teaspoon vanilla extract
JARLSBERG LITE OMELET

In large skillet, sauté mushrooms and green onions in the butter until onions are soft
- 1/2 cup mushrooms, sliced
- 1/3 cup green onions, sliced
- 2 Tbsps butter
- 6 egg whites
- 6 Tbsps cold water
- 2 cups Jarlsberg lite, shredded
- 1/2 cup cooked low fat ham, diced
- Salt and pepper to taste

Preheat 375 degrees. In food processor, combine first 3 ingredients with metal blade until crumbly
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup dark brown sugar
- 1 cup all-purpose flour
- 1 cup pecan halves
- 2 eggs
- 1 cup firmly packed dark brown sugar
- 1 tsp vanilla
- 1/2 tsp salt
- 1 tsp baking powder
- additional flour (see directions)
