CHICKEN IN MILK

Preheat the oven to 375 degrees F (190 degrees C/gas 5), and find a snug-fitting pot for the chicken
- 1 (3 pound/ 1.5 kilogram) organic chicken
- Salt and freshly ground black pepper
- 4 ounces (115 grams) or 1 stick butter
- 1/2 cinnamon stick
- 1 good handful fresh sage, leaves picked
- 2 lemons, zested
- 6 garlic cloves, skin left on
- 1 pint (565 milliliters) milk
BBQ CHICKEN PIZZA - CALIFORNIA PIZZA KITCHEN

Brush a large bowl with olive oil
- 1 teaspoon extra-virgin olive oil, plus more for brushing
- 1/2 pound prepared pizza dough, at room temperature
- 1/3 cup plus 2 tablespoons dark barbecue sauce
- 1 8-ounce skinless, boneless chicken breast
- Kosher salt and freshly ground pepper
- 2/3 cup grated smoked gouda cheese (about 3 ounces)

EASY SHEPHERD'S PIE

Serves 4 Place the peeled and quartered potatoes in medium sized pot
- 11/2 to 2 pounds potatoes (about 3 large potatoes), peeled and quartered
- 8 Tablespoons (1 stick) butter
- 1 medium onion, chopped (about 1 1/2 cups)
- 1-2 cups vegetables—diced carrots, corn, peas
- 1 1/2 lbs ground round beef
- 1/2 cup beef broth
- 1 teaspoon Worcestershire sauce
- Salt, pepper, other seasonings of choice
CHOCOLATE MOUSSE PIE

Sprinkle gelatin onto cold water in small bowl; let stand 1 minute to soften
- 8 or 9-inch baked pastry shell or crumb crust
- 1 tsp unflavored gelatin
- 1 Tbsp cold water
- 2 Tbsps boiling water
- 1/2 cup sugar
- 1/4 cup Hershey’s Cocoa
- 1 cup heavy or whipping cream, well chilled

- 1 small/medium sweet yellow onion, diced small
- 1 clove garlic, peeled and minced finely
- 1/4 cup all-purpose flour
- 2 cups low sodium vegetable stock (chicken stock may be substituted)
- 2 cups fat free half and half (regular half
- and half may be substituted; whole milk or 2% milk will work but soup won't be as creamy)
- 2 to 3 cups broccoli florets, diced into bite
- size pieces + 1 cups stems, optional (I used 3 cups florets and 1 cup stems as not to waste them)
- 2 large carrots, trimmed, peeled, and sliced into very thin rounds, about 1/16th inch
- 3/4 teaspoon salt, or to taste
- 3/4 teaspoon freshly ground black pepper, or to taste
- 1/2 teaspoon smoked paprika or regular paprika, optional and to taste
- 1/2 teaspoon dry mustard powder, optional and to taste
- pinch cayenne pepper, optional and to taste (doesn't make soup spicy and serves to enhance flavor)
- 8 ounces grated high quality extra sharp cheddar cheese, with a small amount reserved for garnishing bowls
- 1 box Trader Joe's Mushroom Soup
- Beef bouillon
- Fresh spices, including my dried garden oregano in a jar
- Some Cumin
- A little Hatch chili powder
- Dried celery flakes
BAKED ZITI (Dottie)

Cook the ziti to just al dente, about 8 minutes
- 1 pound dry ziti pasta
- 1 onion, chopped
- 1 pound lean ground beef
- 1 (26 oz) jar spaghetti sauce with mushrooms
- 6 ounces provolone cheese, sliced
- 2 cans (14.5 oz) diced tomatoes
- 1/2 Tbsp dried basil
- 1/2 Tbsp dried oregano
- 1/4 tsp red pepper flakes
- 6 ounces Mozzarella cheese, shredded
- 2 Tbsps grated Parmesan cheese
CHICKEN AND WILD RICE SOUP

- 4 carrots, chopped
- 4 celery stalks, chopped
- 1 onion, choppped
