- 1 pound lean ground beef (90% lean)
- 1 large sweet onion, chopped
- 3 garlic cloves, minced
- 2 cans (14-1/2 ounces each) diced tomatoes with mild green chilies
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 2 cans (15 ounces each) black beans, rinsed and drained
- 2 to 3 tablespoons chili powder
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 18 packages (1 ounce each) nacho-flavored tortilla chips
- Optional toppings: shredded cheddar cheese, sour cream, chopped tomatoes and pickled jalapeno slices
SHRIMP COCKTAIL SAUCE (Southern Food)

Combine and blend all ingredients well
- 1/2 cup chili sauce
- 1/2 cup ketchup
- 2 tablespoons fresh lemon juice (about 1 small lemon)
- 1 to 2 tablespoons prepared horseradish
- dash Worcestershire sauce
- few drops hot sauce
- salt to taste
SPAGHETTI AND MEATBALL "STOUP"

Preheat a medium soup pot over medium heat
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 1 carrot, peeled and chopped into a small dice
- 1 medium yellow skinned onion, chopped
- 2 small ribs celery from the heart, chopped
- 3 cloves garlic, chopped
- 3 cups tomato sauce or 1 (14-ounce) can plus 1 (8-ounce) can
- 3 cups chicken stock, available in a box on the soup aisle
- 1 pound ground beef, pork and veal mix (meatloaf mix) available at butcher counter
- 1/2 cup grated cheese, Parmigiano or Romano, plus more to pass at table
- 1/2 cup Italian bread crumbs, a few handfuls
- 1 large egg, beaten
- 2 tablespoons chopped parsley leaves
- 1/2 pound spaghetti, broken in half
- 1 cup basil leaves, torn or shredded
- 1 loaf Italian crusty bread, for dunking
GINGERBREAD WITH CARAMEL MASCARPONE CREAM

Grease and flour an 8 x 8-inch square pan
- 2 1/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground allspice
- 8 tablespoons butter, melted and cooled to room temperature
- 3/4 cup molasses
- 3/4 cup light brown sugar
- 1/2 cups buttermilk
- 1/2 cup milk
- 1 egg, slightly beaten
- 1/2 cup whipping cream
- 1 tablespoons granulated sugar
- 1/3 cup Stonewall Kitchen Pumpkin Caramel Sauce
- 4 ounces Mascarpone, room temperature
ZESTY ITALIAN DRESSING

1. Pour ingredients into a glass jar or bottle with a cover
- 1 cup of the vinegar (any type is fine, whether ACV, wine vinegar, rice vinegar, etc...)
- 1 1/3 cup of olive oil or other oil (I usually do half olive oil, half cheaper oil)
- 2 tablespoons of water
- 1/2 tablespoon garlic powder
- 1/2 tablespoon onion powder
- 1/2 tablespoon honey, white sugar, or sucanat
- 1 tablespoons dried oregano
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 1/2 tablespoon dried parsley
- 1 tablespoons salt
DELICIOUS CHOCOLATE PIE
