- 4 4 1 1/4 skinless chicken breasts (about 1 1/4 lb)
- 1/2 1/2 1/2 cup sweet-and-sour sauce
- 1 1 1 can (8 oz) pineapple chunks, drained
- 1 1 1 medium bell pepper, cut into strips
- 1/4 1/4 1/4 small onion, cut into small wedges
- 1/2 1/2 1/2 cup chow mein noodles, if desired

1. preheat the oven to 400 degrees
- 2 cloves garlic, smashed
- 1/4 teaspoon dried thyme
- 1 bay leaf
- 2 teaspoons salt (use less I think too much salt)
- 1/4 teaspoon red pepper flakes
- 1/2 cup nonfat buttermilk
- 1 pound chicken tenders (about 12)

Heat broiler with rack in the highest position
- For the Tuna Salad
- 30 ounces canned tuna, drained
- 1/3 cup celery, halved and thinly sliced
- 1/4 cup red onion, diced
- 1/4 cup mayo + little extra for spreading
- 1 teaspoon whole grain mustard
- 2 teaspoons Dijon mustard
- 3 tablespoons relish
- 1/2 teaspoon lemon juice
- 1/4 teaspoon ground black pepper
- pinch of salt
- For the Sandwiches
- 8 slices fresh, artisan sourdough, 1/4 inch thick.
- 1/4 cup butter, softened, for spreading
