5-Minute Healthy Strawberry Frozen Yogurt

- 4 cups frozen strawberries
- 3 Tablespoons agave nectar or honey
- 1/2 cup plain yogurt (non-fat or full fat)

Prepare an 8×8 baking dish by lining with foil or parchment paper
- 3 cups (18 oz.) chocolate chips
- 1 (14 oz.) can sweetened condensed milk
- 1/4 tsp salt
- 1 cup unsalted peanuts

Whole-Wheat Cookie Cake

Preheat the oven to 350 degrees F
- 1 1/4 cups whole-wheat flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 stick cold butter
- 1/4 cup white sugar
- 1/4 cup brown sugar

- 1/2 cup milk (whole milk always recommended)
- 1 teaspoon pure vanilla extract
- 1 cup chocolate chips or a combination of chocolate chips, nuts and/or Unreal M&M knockoffs
- Homemade whipped cream and berries (optional) for decorating

Peanut Butter Banana Oat Smoothie

Put oats in blender and blend until they’re powdery
- 2 bananas sliced and frozen
- 1/4 cup oats
- 1/4 cup peanut butter
- 3/4 cup milk
Buffalo Ranch Roasted Chickpeas

Preheat oven to 400F. Combine chickpeas with hot sauce in a bowl and coat evenly
- chickpeas cooked (1 can drained and rinsed OR 1 1/2 cups cooked) 15 ozs
- Frank's Hot Sauce 2 tbsps
- nutritional yeast 1 tbsp
- garlic powder 1/2 tsp
- onion powder 1/2 tsp
- dried dill 1/2 tsp
- black pepper ground 1/4 tsp
- dried parsley (I prefer 2 Tbsp) 1-2 tbsp
Stuffed Portobello Mushrooms with Tomatoes and Goat Cheese

If you have not made the oven roasted tomatoes ahead, do them first
- 4 large Portobello mushrooms, about 4″ (10cm) across
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 teaspoon finely chopped shallot (optional)
- 1 large garlic clove, finely chopped
- Salt and pepper, to taste
- 4 ounces of plain goat cheese
- 1 tablespoon fresh chopped parsley
- 1 tablespoons fresh chopped chives
- 1 recipe of oven roasted baby tomatoes
Spinach Feta and Potato Gratin

Spinach Feta and Potato Gratin is a perfect side dish for pork chops or ham slices
- Butter, room temperature, for baking dish
- 5-6 medium-sized red potatoes, washed, peeled, and sliced 1/8-inch thick, divided (or can use sweet potatoes seasoned with salt and pepper)
- 3 cans (13.5 ounce) spinach, washed and drained, pat dry with paper towel (or can use 4 cups of sautéed fresh spinach)
- 1/2 cup crumbled feta cheese
- 2 1/2 cups heavy cream
- 3 eggs
- Salt and pepper to taste
Creamy Queso Dip (with Veggies!)

Melt the butter in a medium sauté pan over medium heat
- 3 tablespoons butter
- 1/3 cup diced onion
- 1 poblano pepper, seeded and diced
- 1 jalapeno pepper, seeded and finely diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1/8 teaspoon red pepper
- 2 tablespoons whole-wheat flour
- 1 cup milk
- 2 cups freshly grated cheese (like Monterey Jack, Grand Cru, or another mild white cheese)
- 1 tomato, finely diced
- 1 cup fresh spinach leaves, cut into ribbons (culinary scissors work best for this job)
Real Food Sloppy Joes!

Heat the oil in a sauté pan over medium heat
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1 rib celery, diced
- 1 carrot, peeled and diced
- 1 pound ground beef (grass-fed recommended)
- 1 clove garlic, minced
- 1/2 teaspoon salt
- A couple dashes of pepper
- 1 15 ounce can plain tomato sauce
- 1 tablespoon honey
- 1 1/2 teaspoons chili powder
- 1 teaspoon apple cider vinegar
- 1 teaspoon yellow mustard
- 1/8 teaspoon cinnamon (Optional: This was the "secret" ingredient that reminded me of the Sloppy Joes from my childhood, but I realize it's out of the ordinary so decide for yourself if you like this addition!)
- Toasted whole-wheat buns for serving (for sliders use small buns or dinner rolls!)
Weeknight Green Curry Shrimp

In a medium sized sauté pan over medium heat melt the coconut oil
- 1 tablespoon coconut oil (or olive oil)
- 1/2 cup diced onion
- 1 lb shrimp, peeled and patted dry
- 1 cup coconut milk (low fat is not recommended)
- 4 teaspoons green curry paste (homemade or store bought)
- 1 teaspoon fish sauce (optional)
- 1/4 cup diced green onions
- 2 tablespoons chopped fresh basil
- Optional accompaniments: Brown rice and steamed sugar snap or snow peas
