- 2 TBSP BUTTER
- 2 1/2 LB GROUND BEEF
- 1 LARGE RED ONION DICED
- 1 LARGE GREEN PEPPER DICED
- 5 CLOVES GARLIC MINCED
- 1 1/2 CUP KETCHUP
- 2 TBSP BROWN SUGAR
- 2 TSP CHILI POWDER ( I USE CALIFORNIA CHILI POWDER )
- 1 TBSP GROUND MUSTARD
- 1/2 TSP RED PEPPER FLAKES
- 1 TSP WORCESTERSHIRE SAUCE
- 2 TBSP TOMATO PASTE ( OPTIONAL )
- TABASCO ( TO TASTE AND OPTIONAL )
- GROUND BLACK PEPPER TO TASTE
- 1/2 -1 CUP APPLE CIDER OR AS NEEDED

- 1 TSP VEGETABLE OIL
- 1 CUP BBQ SAUCE
- 1/2 CUP CIDER VINEGAR
- 1/2 CUP CHICKEN OR BEEF BROTH
- 1/4 CUP BROWN SUGAR
- 1 TBSP MUSTARD
- 1 TBSP WORCESTERSHIRE SAUCE
- 1 TBSP CHILE POWDER
- 1 LARGE ONION CHOPPED
- 1 TBSP MINCED GARLIC
- 1 1/2 TSP THYME
CROCK POT SIMPLE PULLED BEEF

- 5 LB CHUCK ROAST TRIMMED OF EXCESSIVE FAT
- 3 TBSP PAPRIKA
- 3 TBSP BLACK PEPPER
- 2 TBSP GRANULATED GARLIC
- 4 TBSP BROWN SUGAR
- 4 TBSP GROUND MUSTARD
- 1 LARGE RED ONION DICED
HORSERADISH SAUCE

- 2 tablespoons prepared horseradish
- 1 tablespoon cider vinegar
- 1 teaspoon dry mustard
- 3 tablespoons reduced-fat mayonnaise
- 1/8 teaspoon ground red pepper
- 1/2 cup nonfat sour cream
SMOKED CANIDIAN HAM

- PORK LOIN 10 TO 15 LB
- APPLE CIDER CURE IV
- 1 GAL APPLE CIDER
- 3 OZ/WHT INSTA CURE # 1
- 1/2 CUP HONEY
- 1/2 CUP BROWN SUGAR
- 1/4 CUP MOLASSES
- 2 TBSP ALLSPICE CRUSHED
- 3 TBSP BLACK PEPPER
- 2 TBSP ONION POWDER
- 2 TSP GROUND CLOVES
- HAM / BACON RUB
- 5 TBSP BLACK PEPPER
- 2 TSP NUTMEG
- 2 TSP GROUND CLOVES

Bacon Wrapped Smokies with Brown Sugar and Butter

Preheat oven to 375F. Cut the bacon into thirds and wrap each smokie
- 1 pound Bacon, Cut Into Thirds
- 1 pound Smokies
- 1 stick Butter
- 2 cups Brown Sugar
Prime Rib

IMPORTANT: USE A MEAT THERMOMETER! COOKING TIMES MAY VARY WIDELY
- 1 whole Rib Eye Roast (I Use Boneless, But You Can Do More Traditional Bone-in Prime Rib) About 14 Pounds
- 4 Tablespoons Olive Oil
- 1/2 cup Kosher Salt
- 4 Tablespoons Tri-color Peppercorns (or Any Peppercorns)
- 3 sprigs Rosemary
- 3 sprigs Thyme
- 1/2 cup Minced Garlic
Cajun Tartar Sauce

Put the egg, garlic, lemon juice, parsley, and green onions in a food processor and puree for 15 seconds
- 1 large egg
- 1 tablespoon minced garlic
- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped parsley leaves
- 2 tablespoons chopped green onions
- 1 cup olive oil
- 1/4 teaspoon cayenne
- 1 tablespoon Creole or whole-grain mustard
- 1 teaspoon salt
