Grilled Red Peppers Stuffed With Mozzarella

Thinly slice bread, remove crusts and cut into enough 1/2 inch croutons to make 1 cup
- 1 small loaf crusty Italian bread
- 3 tablespoons olive oil
- 3 medium sweet red peppers
- 1 cup fresh mozzarella cheese in small cubes
- 1 1/2 teaspoons dried basil
- 1 garlic clove -- chopped fine
- 1 tablespoon olive oil
- Salt -- to taste
- Freshly-ground black pepper -- to taste
Grilled Whole Salmon

Wash and dry salmon thoroughly
- 1 whole salmon - (8 to 10 lbs)
- Salt -- as needed
- 1/4 cup olive oil
- 4 tablespoons minced fresh parsley
- 1/2 cup melted butter - (4 oz)
- 3 tablespoons lemon juice - (to 4)
- Lemon wedges -- for serving

- 1 tablespoon olive oil
- 2 cups thinly-sliced leek -- divided
- 1 1/2 cups sliced mushrooms
- 1 garlic clove -- crushed
- 4 cups water
- 1/2 cup uncooked wild rice
- 1/4 teaspoon salt -- divided
- 1/4 teaspoon freshly-ground black pepper -- divided
- 4 thyme sprigs
- 4 cleaned brook trout - (8 oz ea)
- 1 tablespoon butter
- 1 tablespoon chopped fresh parsley
- Additional thyme sprigs -- (optional)
