Peanut Butter Fudge

Microwave butter and peanut butter for 2 minutes on high
- 1 cup butter -- plus
- more for greasing pan
- 1 cup peanut butter
- 1 teaspoon vanilla
- 1 pound powdered sugar
Smashed Potatoes with ChivesRecipe

Directions Place potatoes in a large pot, cover with salted water by at least 3 inches and bring to a boil
- 3 lbs medium-size unpeeled baby potatoes
- 6 Tbs unsalted butter
- 1/2 cup thinly sliced fresh chives
- Salt and pepper
Turkey With Stuffing

- 1 turkey - (10 to 12 lbs) -- with giblets removed
- 1 quart chicken broth
- 2 ounces dried mushrooms
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped green pepper
- 1 tablespoon vegetable oil -- plus
- extra for rubbing on turkey
- 1 tablespoon kosher salt -- plus
- extra for seasoning turkey
- 3 cups Challah bread in 1/2" cubes
- = (from approximately 4 to 5 slices)
- 4 ounces unsweetened dried cherries - (abt 1 cup)
- 2 ounces chopped pecans - (abt 1/2 cup)
- 2 whole eggs -- beaten
- 2 teaspoons dried rubbed sage
- 2 teaspoons dried parsley
- 1/2 teaspoon freshly-ground black pepper -- plus

Whole Chicken, Halved, And Grilled

Rub each chicken half with a small amount of oil, then rub in the spice rub (or other spices of choice)

- 1 cup cooked long-grain or basmati rice
- 1 cup whole milk
- 1/2 cup heavy cream
- 3/4 cup coconut milk
- 2 ounces sugar - (abt 1/4 cup)
- 1/4 teaspoon ground cardamom
- 1 1/2 ounces golden raisins - (abt 1/3 cup)

- 2 cups crushed gingersnaps
- 4 apricots -- pit removed, and
