Place fish in a glass dish large enough to hold fillets in a single layer
- 1 1/2 pounds orange roughy fillets

- 1/3 cup white or gold tequila
- 1/2 cup triple sec
- 3/4 cup fresh lime juice
- 1 teaspoon salt
- 2 large garlic cloves -- crushed
- 1 tablespoon vegetable oil -- divided
- 3 medium tomatoes -- diced
- 1 medium finely-chopped white onion
- 1 tablespoon minced jalapeño or serano chile
- 2 tablespoons chopped cilantro
- 1 pinch sugar
- Freshly-ground black pepper -- to taste
Chicken Piccata

Coat chicken with the flour
- 4 boneless chicken breasts, flattened
- 1/4 cup flour
- 1/2 stick butter, divided
- 1 clove garlic clove minced
- 1/2 cup white wine
- 2 Tbs lemon juice
- 1 chicken bouillon cube
- 1 1/2 Tbs capers
- 1 Tbs fresh parsley

In heavy medium saucepan, combine sugar, cocoa powder, and salt
- 2 cups sugar
- 2/3 cup Dutch process cocoa powder
- 1/2 teaspoon salt
- 1 cup light corn syrup
- 1/4 cup water -- plus
- 1 tablespoon water
- 1 teaspoon white vinegar
- 1 1/2 tablespoons butter -- plus
- additional for greasing pan and hands

- 8 ounces bittersweet chocolate -- chopped fine
- 12 ounces heavy cream - (1 1/2 cups)
- 8 ounces whole milk - (1 cup)

Macadamia Nut Crusted Mahi Mahi

- 5 ounces roasted macadamia nuts - (abt 1 1/4 cups) -- coarsely ground
- 1/2 cup panko (Japanese-style bread crumbs)
- 2 tablespoons all-purpose flour
- 1/4 cup butter -- melted
- Vegetable oil -- for brushing foil
- 4 mahi mahi fillets - (6 to 8 oz ea)
- Kosher salt -- to taste
- Freshly-ground black pepper -- to taste
- 2 tablespoons coconut milk
Omelet

Crack warm eggs into bowl, add salt, and blend with fork
- 3 eggs -- warmed in hot water
- for 5 minutes

- 1 teaspoon room temperature butter -- plus

- = (approximately 3 medium tomatillos)
- 1 pound seedless green grapes - (abt 3 cups)
- 1 cup chopped walnuts -- toasted
- 1 cup plain yogurt
- 1 cup white grape juice
- 1 teaspoon rice wine vinegar
- 6 large mint leaves
