Backyard Barbecue Spareribs

These classically flavored spareribs are good any time year
- 2 slabs pork spareribs
- 1 cup ketchup
- 1/4 cup Worcestershire sauce
- 1 1/2 cups cherry cola soft drink
- 1/4 cup vinegar
- 2 teaspoons paprika
- 2 teaspoons chili powder
- 1 teaspoon freshly-ground black pepper
- 1 medium onion -- chopped
Chocolate Doughnut Glaze

Combine butter, milk, corn syrup, and vanilla in medium saucepan and heat over medium heat until butter is melted
- 1/2 cup unsalted butter
- 1/4 cup whole milk -- warmed
- 1 tablespoon light corn syrup
- 2 teaspoons vanilla extract
- 4 ounces bittersweet chocolate -- chopped
- 2 cups confectioners' sugar -- sifted
Spicy Beer Marinade

Combine all the ingredients in a small bowl
- 1 teaspoon Tabasco sauce
- 3 tablespoons cider vinegar
- 1 bottle lager beer - (12 oz)
- 1 tablespoon coarse-grained mustard
- 1 tablespoon Worcestershire sauce
- = (or 1 tbspn A-1 steak sauce)
- 1/2 cup soy sauce
- 2 teaspoons minced garlic
- 2 tablespoons minced onion
- 1 teaspoon salt
- 1 teaspoon freshly-ground black pepper
Salt-And-Pepper Beef Ribs

Generously season beef ribs on both sides with salt and pepper
- 1 rack beef ribs rack - (2 1/2 to 3 lbs)
- Coarse sea salt -- to taste
- Cracked or coarsely-ground black pepper -- to taste
- 3 cups apple or hickory chips or chunks -- soaked in water to
- cover for 1 hour, then drained
- Favorite barbecue sauce
Classic Fajitas

Preheat grill with all burners set to high and the lid down until the grill is very hot, about 15 minutes
- 1 flank steak - (abt 2 1/2 lbs)
- 1/4 cup lime juice
- Salt -- to taste
- Freshly-ground black pepper -- to taste
- 1 large onion -- peeled, and cut
- into 1/2"-thk rounds
- 2 large red or green bell peppers -- cored, seeded,
- and cut into large wedges
- 16 flour tortillas - (10" dia)
- Salsa -- for serving
- Guacamole -- for serving
Chicken Salad Sandwiches2006,

Preheat the oven to 350 degrees F
- 4 split (2 whole) chicken breasts, bone-in, skin on
- Good olive oil
- Kosher salt and freshly ground black pepper
- 3/4 cup good mayonnaise, plus more for the bread
- 1 1/2 Tbs chopped fresh tarragon leaves
- 1 cup small-diced celery (2 stalks)
- 8 to 10 slices health or seven-grain bread
- 1 package mesclun salad mix
Grilled Honey-Soy Pork Steaks

Combine all ingredients in a self-sealing plastic bag; seal bag and place in refrigerator 4 to 24 hours
- 2 pork blade steaks, 1" thick
- 2 small garlic cloves -- minced
- 2 tablespoons finely-chopped onion
- 2 tablespoon lemon juice
- 2 tablespoon soy sauce
- 1 tablespoon honey
Grilled Plantains With Citrus Glaze

Light a grill fire. Combine the orange juice, lime juice, and brown sugar in a small saucepan
- 1/2 cup orange juice
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 2 large ripe plantains
- = (yellowish black or black)
- 1 tablespoon canola
- = (or other tasteless oil)
- Salt -- to taste
Hobo Pack With Mushrooms Italiano

Preheat grill. Lay 2 sheets of heavy-duty foil, each 24 inches long, one on top of each other
- 1 pound small fresh white mushrooms
- 1 large red onion -- cut thin wedges
- 1/4 pound thinly-sliced Prosciutto di Parma -- cut thin strips
- = (1/4 lb smoked ham, cut thin strips)
- 2 large garlic cloves -- thinly sliced
- 2 tablespoons olive oil
- 1 bag prewashed spinach - (10 oz)
Banana's Foster

Melt butter in a 10-inch heavy skillet over low heat
- 2 tablespoons unsalted butter
- 1/4 cup dark brown sugar
- 1/4 teaspoon ground allspice
- 1/2 teaspoon freshly-ground nutmeg
- 1 tablespoon banana liqueur
- 2 under-ripe bananas -- halved lengthwise
- 1/4 cup dark rum
- 1/2 teaspoon finely-grated orange zest
