Curry Powder Blend

Place all ingredients in a container with an airtight lid
- 2 tablespoons whole cumin seeds -- toasted
- 2 tablespoons whole cardamom seeds -- toasted
- 2 tablespoons whole coriander seeds -- toasted
- 1/4 cup ground turmeric
- 1 tablespoon dry mustard
- 1 teaspoon cayenne
Leek Potato Soup

Chop the leeks into small pieces
- 1 pound leeks - (abt 4 to 5 med) -- cleaned, and
- dark green sections removed
- 3 tablespoons unsalted butter
- Heavy pinch kosher salt -- plus
- additional for seasoning
- 14 ounces Yukon gold potatoes - (abt 3 small) -- peeled, diced small
- 1 quart vegetable broth
- 1 cup heavy cream
- 1 cup buttermilk
- 1/2 teaspoon freshly-ground white pepper
- 1 tablespoon snipped chives
Pistachio Fruit Balls

Put the pistachios in the bowl of a food processor and pulse until finely chopped, but not powdery
- 5 ounces roasted pistachios - (abt 1 cup)
- 4 ounces dried cherries - (abt 1 cup)
- 2 ounces dried apricots - (abt 1/2 cup)
- 2 ounces golden raisins - (abt 1/2 cup)
- 2 ounces pitted dates - (abt 1/2 cup)
- 1 tablespoon orange juice
- 2 tablespoons creme de cassis
Sugar Cookies

Sift together flour, baking powder, and salt
- 3 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter -- softened
- 1 cup sugar
- 1 egg -- beaten
- 1 tablespoon milk
- Powdered sugar -- for rolling dough
Chipotle Dry Rub

Combine all ingredients in a spice mill or blender and grind until even
- 2 dried chipotle peppers
- = (use 3 to heat it up a little)
- 3 tablespoons freshly-ground black pepper
- 2 tablespoons dried oregano
- 1 tablespoon dried cilantro leaves
- 1 bay leaf
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 1 teaspoon ground dry orange peel
Oyster Soup

In a heavy 2-quart saucepan over medium heat, bring the heavy cream and oyster liquor from the oysters to a simmer
- 4 cups heavy cream
- 1 pint oysters and liquor -- separated
- 1 tablespoon unsalted butter
- 1/2 cup finely-chopped celery
- 1/2 cup finely-chopped onion
- 1 teaspoon celery seed
- 1 1/2 teaspoons hot pepper sauce
- 1 tablespoon lemon juice
- 2 tablespoons freshly-chopped parsley leaves,
- chervil, or chives
- Salt -- to taste
- Freshly-ground black pepper -- to taste
Wasabi-Glazed Whitefish With Zucchini Slaw

Combine soy sauce, 1/2 teaspoon of the seasme oil, 1/4 teaspoon of the sugar, and the wasabi powder
- 2 tablespoons light soy sauce
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon sugar
- 1/4 teaspoon wasabi powder
- = (or 1 tbspn prepared horseradish)
- 4 fresh skinless whitefish, sea bass, or
- orange roughy fillets, 1" thk - (4 oz ea)

- 1 1/3 cups coarsely-shredded zucchini
- 1 cup sliced radishes
- 1 cup fresh pea pods
- 2 tablespoons snipped fresh chives
- 3 tablespoons rice vinegar
Grill-Steamed Sesame Green Beans

- 2 tablespoons toasted sesame oil
- 1 tablespoon low-sodium soy sauce
- 1/2 teaspoon granulated sugar
- 1 pound green beans -- ends trimmed
- 1 tablespoon toasted sesame seeds
Spinach Fettuccini with Gorgonzola Cream SauceRecipe

Heat water to a boil for pasta, salt water and cook pasta to al dente
- Salt
- 1 1/2 (12-ounce) packages spinach fettuccini, 18 ounces total
- 2 Tbs butter
- 2 cloves garlic, finely chopped
- 2 Tbs all-purpose flour
- 1 cup chicken stock
- 1 cup cream
- 8 oz Gorgonzola, cut into small pieces
- A few leaves fresh sage, finely chopped
- Freshly ground black pepper
- 4 handfuls baby spinach leaves
