Blueberry Banana Muffins

Heat oven to 375 degrees. Coat a standard muffin pan with cooking spray
- Vegetable oil cooking spray
- 1 large egg
- 2 Tbs fat-free sour cream
- 2 Tbs lowfat buttermilk
- 1/2 cup oat bran
- 1/3 cup whole-wheat flour
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups mashed banana (about 3 medium)
- 2 Tbs brown sugar
- 1/2 cup blueberries, fresh or frozen, unsweetened
- 1/2 tsp grated orange zest (optional)
Salmon Salad with Roasted Asparagus

Combine all salad ingredients, except salmon, in bowl
- 3/4 3/4 3/4 cup diced zucchini
- 3/4 3/4 3/4 cup diced cucumber
- 1/2 1/2 1/2 cup diced roasted red pepper
- 1/2 1/2 1/2 cup diced roasted yellow pepper
- 1/3 1/3 1/3 cup julienned sundried tomatoes
- 1 1 1 tablespoon capers, chopped roughly (left whole if small)
- Handful Handful of snow peas, blanched and julienned
- 1/2 1/2 1/2 cup cilantro leaves, whole (simply picked from stems)
- 1/2 1/2 1/2 cup parsely leaves, whole (simply picked from stems)
- 5 5 1/2 roasted asparagus spears, cut into ½ inch lengths, approximately 1/2 cup
- 8 8 8 ounces roasted salmon filet
- Vinaigrette
- 1/4 1/4 1/4 cup rice wine vinegar or lemon juice
- 1 1 1 teaspoon Dijon mustard
- Coarse salt and freshly ground black pepper
- 1 1 1 small shallot, minced
- 1/2 Zest from 1/2 a lemon
- 3/4 3/4 3/4 cup extra-virgin olive oil
- Combine all salad ingredients, except salmon, in bowl.
- In a separate bowl, whisk together rice wine vinegar, mustard, salt, pepper, shallot and lemon zest. Drizzle in oil, whisking constantly.
- to as much vinaigrette as you’d like over the salad, tossing to coat.
- to to to filet, add to salad and gently combine. If you toss too enthusiastically the salmon will continue to flake — I like to add the salmon last, so that I can preserve larger pieces.

- 2 Tbs extra-virgin olive oil
- Kosher salt
- Citrus Dressing, recipe follows
- 8 cups baby spinach
- 1/2 cup pecans, toasted and chopped
- 1/3 cup crumbled goat cheese
- 1/2 cup dried cranberries
Chocolate Truffles

Place the 10 ounces of chocolate and butter in a medium-size glass mixing bowl
- 10 ounces bittersweet chocolate -- chopped fine
- 3 tablespoons unsalted butter
- 1/2 cup heavy cream
- 1 tablespoon light corn syrup
- 1/4 cup brandy
- 1/2 cup Dutch process cocoa powder, finely-chopped
- nuts, and/or toasted coconut -- for coating truffles
- 8 ounces semisweet or bittersweet chocolate -- chopped fine
