In a medium saucepan over medium-high heat, bring the stock or broth to a boil
- 2 1/4 cups chicken stock or broth
- 1 1/2 cups couscous
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced fresh mint
- 1 garlic clove -- minced
- 1/4 cup minced scallions
- 1/4 cup diced cucumber
- 1/4 cup diced bell pepper
- 1/4 cup diced zucchini
- 1/4 cup freshly-squeezed lemon juice
- 1/4 cup extra-virgin olive oil
- Salt -- to taste
- Freshly-ground black pepper -- to taste

- 3 ounces sweet potatoes -- peeled, cubed
- 1 1/4 cups plain yogurt
- 3/4 cup dark brown sugar - (packed)
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 5 egg yolks
- Salt -- to taste
- 1 frozen 9" deep-dish pie shell
- 1 cup chopped pecans -- toasted
- 1 tablespoon maple syrup

Chicken Stock

Place chicken, vegetables, and herbs and spices in 12-quart stockpot
- 4 pounds chicken carcasses -- including
- necks and backs
- 1 large onion -- quartered
- 4 carrots -- peeled, halved
- 4 ribs celery -- cut in half
- 1 leek, white part only -- halved lengthwise
- 10 sprigs fresh thyme
- 10 sprigs fresh parsley with stems
- 2 bay leaves
- 8 peppercorns - (to 10)
- 2 whole garlic cloves -- peeled
- 2 gallons cold water
Chocolate Pudding

Place 1 3/4 cups of dry pudding mix into a medium saucepan
- 1 3/4 cups Instant Chocolate Pudding Mix -- (listed below)
- 2 cups milk
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- === INSTANT CHOCOLATE PUDDING MIX ===
- 3 ounces Dutch-processed cocoa - (abt 1 cup)
- 2 ounces cornstarch - (abt 1 cup)
- 6 ounces confectioners' sugar - (abt 1 cup)
- 1 1/2 ounces instant non-fat dry milk - (abt 1 cup)
- 1 teaspoon salt
Chesapeake Grilled Chicken

Mix ingredients in a bowl
- 4 chicken parts
- = (legs and thighs work well)
- 1/2 cup honey
- 1/2 cup cider vinegar
- 3 tablespoons Old Bay seasoning
- 1 teaspoon celery salt

Vegetable Curry

Poke several holes in the bag of frozen vegetables and microwave on high for 2 to 3 minutes or until thawed
- 1 bag mixed frozen vegetables - (16 oz)
- 2/3 cup plain yogurt
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 teaspoon mustard seeds
- 1 teaspoon ground turmeric
- 1/2 teaspoon onion powder
- 1/2 teaspoon freshly-ground coriander
- 1/8 teaspoon freshly-ground cinnamon
- 2 medium garlic cloves -- crushed
- 3 dried red chiles -- stems and seeds
- removed if less heat is desired
- 1/4 teaspoon sugar
- 1/2 teaspoon kosher salt
- Freshly-ground black pepper -- (optional)
Creamed CornRecipe

- 8 large cobs fresh corn, preferably white, shucked and cleaned
