Chicken and Fontina Stromboli

Preheat oven to 375°. For filling, combine the chicken, arugula, onion and Fontina

- 3 cups cooked chicken*, shredded
- 3 cups baby arugula
- 1 large onion, sauteed or caramelized
- 3 cups (12 ounces) Wisconsin Fontina Cheese, shredded
- 1 egg beaten with 1 tablespoon water

- 1/4 cup mayonnaise
- 1 cup shredded Gruyere cheese, divided (I used heaping measures for cheese
- 1/4 cup finely chopped parsley, plus more for topping (I used a mixture of parsley, tarragon and chives)
- 1/4 cup butter
- 1 small shallot (or one “clove” of a big shallot), finely chopped
- 1 pound medium fresh baby shrimp
- 3/4 teaspoon salt and a few grinds of pepper

Buffalo Chicken Bites

One of my favorite guilty pleasures is buffalo wings, especially dipped in blue cheese dressing
- 1 cup finely diced cooked chicken breast
- 1/2 cup crumbled blue cheese
- 2 tablespoons shredded cheddar cheese
- 1/4 cup hot sauce (Frank's brand is what I used)
- 4 tablespoons unsalted butter, melted and cooled
- 2 1/4 teaspoons rapid rise dry yeast
- 2 tablespoons brown sugar
- 1 cup warm milk ( I used 2%)
