Season cutlets with salt and pepper
- 2 4-oz. boneless pork cutlets, pounded 1/16" thin
- Kosher salt and freshly ground black pepper, to taste
- 2 oz. deli ham, thinly sliced
- 2 oz. Emmentaler cheese, thinly sliced
- 1/3 cup flour
- 1 egg, beaten
- 1/2 cup bread crumbs
- 1 cup canola oil
- 3 tbsp. unsalted butter
- Lemon wedges, for serving
Pimm's

- Pimm's:
- 1 measure Pimm's -- available in Liquer section of liquor store or make your own - recipe below
- 3 measures lemonade
- Slices cucumbers, strawberries, orange
- Mint sprigs, optional
- 1 measure Gin
- 1 measure red vermouth
- 1 measure orange curacao

Bon Appetit's Creamy Risotto

Combine 1 Tbsp. salt and 10 cups water in a medium stockpot
- 1 Tbsp. kosher salt, plus more
- 6 Tbsp. extra-virgin olive oil
- ½ large white onion, finely chopped (about 1½ cups)
- 2 cups carnaroli or Japanese sushi rice
- 1 cup dry white wine
- 5 Tbsp. unsalted butter, cut into pieces
- 7 oz. finely grated Parmesan (about 1¾ cups), divided
- Freshly ground black pepper

- 5 oz. iced coffee
- 1 oz. peach nectar
- 1 ⁄4 oz. lime juice
- 1 ⁄4 oz. simple syrup or 1 sugar packet

THE TOPPINGS: In a medium bowl, toss the onion with the lemon juice
- 1 medium red onion, thinly sliced
- 2 tablespoons lemon juice
- 1 small cucumber, peeled and grated
- 1 clove garlic, minced
- 3/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 7 ounces plain Greek yogurt
- 1 pound ground lamb
- 1/2 cup finely chopped onion
- 1/2 cup crumbled feta cheese, preferably with herbs
- 1/4 cup chopped fresh mint leaves
- 1 clove garlic, minced
- 2 teaspoons olive oil
- 1/2 teaspoon smoked paprika
- 20 mini pita breads, split in half

Toast bread slices. While they are still warm, rub with garlic
- Thin baguette -- sliced on the diagonal
- 2 cloves of fresh garlic - peeled and sliced in half
- Extra virgin olive oil -- as ypung as possible
- Salt -- more coarse, than fine ground

- 4 cups chicken stock
- 1 ounce unsalted butter
- 1 ounce olive oil
- 1 large shallot, finely chopped
- 1 cup arborio rice or carnoroli rice
- 3/4 cup dry white wine
- Salt and pepper
- 1/2 cup creme fraiche
- 1 cup shaved Parmigiano Reggiano
