Hoisin-Turkey Meatballs with Glass Noodles

Meatballs Preheat oven to 375°
- Meatballs
- Neutral oil (for greasing)
- ½ cup red or white quinoa, rinsed
- Kosher salt
- 3 garlic cloves, finely chopped
- 1 1" piece ginger, peeled, finely chopped
- ½ tsp. crushed red pepper flakes
- 5 Tbsp. hoisin sauce, divided
- 1 lb. ground turkey
- Noodles and Assembly
- 4 oz. dried glass noodles
- 2 Tbsp. soy sauce
- 3 garlic cloves, finely chopped
- 1 1" piece ginger, peeled, finely chopped
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. unseasoned rice vinegar
- 2 tsp. sugar
- 2 Tbsp. vegetable oil, divided
- 2 cups sliced snap peas and/or snow peas
- 2 small zucchini, cut into matchsticks (about 4 cups)
- 1 cup mung bean sprouts (optional)
- Kosher salt (optional)
- Sliced scallions, toasted sesame seeds, and lime wedges (for serving)
Pull Apart Bacon French Toast Muffins

Instructions Combine the Egg Mixture ingredients in a bowl and whisk with a fork until combined
- 5 cups of bread cut into 2cm/1" cubes (fresh or stale - see notes 1 and 2)
- 3 rashers bacon, diced

Harden goat cheese in the freezer for 10 to 15 minutes
- 1 lb ground beef
- 8 oz goat cheese log
- 1 egg
- 1/2 cup flour
- 1/2 cup panko bread crumbs
- 1 tsp garlic powder
- 2 tsp parsley, chopped
- Oil for frying
- 1/2 cup smashed raspberries (I just smashed mine up with a fork in a small bowl)
- 1/2 cup balsamic vinegar
- Shredded lettuce for topping
- 12 buns, toasted on the grill (or a grill pan)
