Beer Cheese Sauce

In a medium sauce pan, melt the butter
- 4 Tbsp unsalted butter
- 1/2 cup yellow onion, minced
- 4 Tbsp AP Flour
- 2 cups beer
- 1 cup heavy cream
- pinch of nutmeg
- 2 cups cheddar (we used 5 Spoke Creamery Tumbleweed)
- 1/2 cup blue cheese
- 4 oz. creme fraiche
- salt and pepper, to taste
Crispy Pork Belly Recipe | SAVEUR

Heat the oven to 250°. Place the pork belly, skin side up, in a roasting pan
- One 4-lb. piece skin-on pork belly
- Kosher salt and freshly ground black pepper
- 6 shallots, halved lengthwise
- 6 small carrots, cut into 3-inch lengths
- 4 small turnips, peeled and quartered
- 3 medium leeks, white and light green parts, cut into 3-inch lengths
- 1 ⁄4 cup olive oil
- Vegetable oil, for frying
- 3 Granny Smith apples, peeled, cored, and roughly chopped
- 1 cup apple cider
The Nobby Burger

Procedure 1. Preheat a gas or charcoal grill to medium-high heat and cook the bacon until crisp
- 8 slices thick-cut bacon
- 1 pound ground chuck
- Salt and pepper to taste
- 1 tablespoon unsalted butter
- 4 kaiser-style rolls
- 4 slices sharp cheddar or pepper jack
- 3 tablespoons
- Secret Sauce (4 parts mayonnaise and 1 part red relish)
- 2 tablespoons chopped Vidalia or other sweet onion
- 8 crisp dill pickle chips
- 1 cup chopped iceberg lettuce, patted dry and chilled
- 4 slices beefsteak tomatoes
Chocolate Zuccotto Cake

1) Line a 2 quart stainless steel bowl with plastic wrap
- Ingredients:
- 1 ) 1 Chocolate Cake
- 2 ) 45 oz. of Chocolate Zucotto Filling (see recipe below)
- 3 ) 5 oz. (3 1/4 cups) Chocolate Zucotto Frosting
- Preparation:
- 1 ) Line a 2 quart stainless steel bowl with plastic wrap.
- 2 ) Cut round top off the cake to make a flat surface. Save cake scraps.
- 3 ) Using a turn-table...cut cake into 4 equal layers.
- 4 ) Press 1 layer into the bottom of a lined stainless steel bowl.
- 5 ) Place 15 oz. of zucotta filling on cake...place another cake on top and repeat...
- creating a total of 3 layers of filling and 4 cake layers. Note...put the smallest
- layer of cake in the bottom of bowl and finish with the largest.
- 6 ) Using a palette knife...frost cake completely and evenly with chocolate frosting.
- The Chocolate Zuccotto Filling (2 quarts)
- Ingredients:
- 1 ) 1 Bittersweet Chocolate piece.
- 2 ) 3/4 cup Sambucca (Samballa)
- 3 ) 1/2 quart of Heavy Cream
- Preparation:
- 1 ) Cover chocolate with plastic wrap. Melt and keep hot (a hot box is best).
- 2 ) Put all of the cream in a large mixer with the Sambucca. With whip attachment...
- whip for 2 to 2 1/2 minutes on speed 3...no peaks.
- 3 ) When cream is under whipped (cream just begins to stick to sides of bowl) and
- chocolate is hot to the touch...pour chocolate quickly into the mixer.
- 4 ) On speed 3...whip until incorporated. Scrape bottom and sides. Add remaining
- cream and whip until incorporated on speed 2 for approximately 30 seconds.
- Then scape sides and whip on speed 3 for 1 minute.
- 5 ) Do not overwhip cream and chocolate.
The Benedict

Heat 3-4 quarts water to just below boiling point
- 3 tablespoons white wine vinegar
- 4 eggs
- Salt and pepper
- 8 slices Canadian bacon
- 4 tablespoons butter, divided
- 4 English muffins, split
- 4 tablespoons Wisconsin Sharp Cheddar cheese spread, at room temperature
- 4 slices Wisconsin Gouda cheese
- 4 ounces fresh spinach leaves
- 1 tomato, sliced
ROSEMARY–MAPLE ROAST CHICKEN

Heat oven to 450°. Combine maple syrup and balsamic vinegar and set aside
- 2 tbsp. maple syrup
- 1 tbsp. balsamic vinegar
- 1 whole chicken (about 3 1⁄2 lb.)
- Kosher salt and freshly ground pepper, to taste
- 2 tbsp. canola oil
- 1 tbsp. finely chopped fresh rosemary, plus 3 sprigs
- 4 cloves garlic, minced
- 3 small yellow onions, cut into 8 wedges
Open-Faced Cheddar Grilled Cheese with a Fried Egg

- 1 tablespoon unsalted butter
- 1 slice hearty, top quality bread, such as multigrain or sourdough
- 2-3 ounces mild Wisconsin cheddar cheese, thinly sliced
- 1 egg
- Approximately 1/4 cup clarified butter or extra virgin olive oil, for frying
- Coarse salt and cracked black pepper to taste
Bacon Potato Pancakes

- 4 slices bacon
- 4 Idaho potatoes, peeled and shredded
- 1/4 cup all-purpose flour
- 2 eggs
- 4 garlic cloves, minced

- salt and ground black pepper to taste

Grilled Lamb Burgers with Red Onion Aïoli | SAVEUR

Gently mix lamb, 1 tsp. cumin, salt, and pepper in a bowl; divide mixture into 4 patties about 1" thick
- 1 1⁄2 lb. ground lamb
- 1 1⁄2 tsp. ground cumin

- 5 cloves garlic, peeled and wrapped in aluminum foil
- 1 large red onion, sliced crosswise into 1/4"-thick rings
- 1 cup olive oil
- 2 egg yolks
- Juice and zest of 1 lemon
- 1 ⁄2 cup canola oil
- 2 medium ripe Hass avocados
- Juice of 1 lime
- 4 hamburger buns, split
