- Korean meatloaf:
- 2 2 2 lbs ground pork
- 1 1/2 1 1/2 1/2 cups panko bread crumbs
- 1 1 1 large onion - finely diced
- 8 8 8 cloves garlic - crushed
- 2 2 2 tbsp gochujang
- 5 5 5 green onions - minced
- 2 2 2 tsp kosher salt
- 2 2 to large eggs - lightly beaten to combine
- 2 2 2 tsp vegetable oil
- Gochujang glaze:
- 3 3 3 tbsp apricot jam
- 2 2 2 tbsp gochujang
- 1 1 1 tbsp rice wine vinegar
- 1 1 1 tbsp honey
- 2 2 2 tsp soy sauce
- 1 1 1 tsp sesame oil
- 1/2 1/2 2 tsp granulated garlic powder or 2 cloves garlic, minced
- mustard pickled onions:
- This doesn't sound Korean. It doesn't taste Korean. But it goes unbelievably well with this Korean meatloaf. Makes no sense but it totally works.
- 1 1 3 large white onion - thinly sliced. About 3 cups worth.
