"Flank Steak in Adobo

Salsa verde is a green salsa made from tomatillos and green chiles
- 1 ½ ounces dried ancho chiles, stemmed and seeded
- 1 ounce dried pasilla chilies, stemmed and seeded
- ¾ cup salsa verde
- ¾ cup chicken broth
- ½ cup orange juice
- ⅓ cup packed brown sugar
- ¼ cup lime juice (2 limes)
- 1 ½ teaspoons dried oregano
- 1 teaspoon salt
- ½ teaspoon pepper
- FLANK STEAK
- 2 ½—3; pounds flank steak, trimmed and cut into 1 1/2-inch cubes
- Salt and pepper
- 2 tablespoons vegetable oil
- 1 onion, chopped fine
- 8 garlic cloves, minced
- 1 tablespoon ground cumin
- 12 (8-inch) flour tortillas, warmed
- 4 ounces queso fresco, crumbled (1 cup)
- ½ cup coarsely chopped fresh cilantro

For the Garlic Bacon: Preheat the oven to 375°F and line a rimmed baking sheet with foil
- 12 sliced bacon
- 3 garlic cloves, grated, pressed, or finely minced
- 1 teaspoon sugar
- Freshly ground black pepper
- 1 cup mayo
- Zest and juice of 1 lemon
- Tiny drizzle of honey (optional)
- Salt and pepper, to taste
- 8 slices of multigrain bread, toasted

Stir-Fry Sauce

Mix together until cornstarch dissolves, pour into skillet and cook until thickened
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/2 cup water
- 1 tsp ground ginger
- 1 tsp ground garlic
- 1/4-1/2 tsp red pepper flakes
- 1 tbsp cornstarch

- 4 boneless skinless chicken breasts
- 1/3 cup balsamic vinegar
- 3/4 cup olive oil
- 3 Tbsp brown sugar
- 2 Tbsp steak seasoning
- 2 tsp fresh rosemary, minced (can substitute 1/2 tsp dried rosemary leaves)

- 1 tbsp Light soy sauce
- 1 tbsp Cooking wine
- 1 tbsp Cooking oil
- 1 tbsp Corn starch
- 1 tbsp Water

- 1 tbsp Soy sauce
- 2 tbsp Sweet bean paste (The yellow bean sauce is preferred but Hosin sauce is a perfect substitue)
- 1/2 tbsp Oyster sauce (optional)
- 1 tsp Ginger. Grated.

- 1 tbsp Sugar
- 1/2 tsp Saseme oil (about 2 drops)
