DIRECTIONS Preheat oven to 350 and line a large baking sheet with parchment paper
- 3 c. apples, peeled, cored, and finely chopped
- Juice of 1 lemon
- 2 c. water
- 1/2 c. packed brown sugar
- 1/4 c. cornstarch
- 1 tsp. vanilla
- 1 tsp. cinnamon
- Pinch kosher salt
- 2 Eggs, beaten
- 2 tbsp. Sanding sugar
- Caramel, for serving

- 4 pounds russet potatoes, cut into 1/4 inch matchsticks
- 2 of your favorite beers, I used a Canadian beer (can sub water)
- 4 tablespoons unsalted butter
- 1/4 cup flour (use a gluten free flour blend if needed)
- 1 shallot, finely minced
- 1 clove garlic, minced or grated
- 3 1/2 cups low sodium beef stock*
- 1/2 cup stout beer (or more beef stock)
- 2 tablespoons ketchup
- 1 tablespoon balsamic vinegar
- 2 teaspoons worcestershire sauce
- salt and pepper, to taste
- canola oil, for frying

Chicken Noodle and Miso Soup Fusion

A while ago I really got into Japanese miso soup and now I always have a tub of miso in my fridge
- 1 Tablespoon Oil
- 1 Onion (cut Into Wedges)
- 1 Carrot (cut Thinly With a Vegetable Peeler)
- 1 Stalk Celery (chopped)
- 1 Sprig Thyme
- 1 Bay Leaf
- 4 Cups Homemade Chicken Stock
- 1 Cup Soba Noodles
- 1 Tsp Dashi Granules
- 1/2 Cup Cooked Chicken (shredded)
- 3 Tablespoons White Miso Paste
- Salt and Pepper to Taste
- 1 Tablespoon Fresh Parsley Leaves

Mix up dressing, pour over salad ingredients, toss well
- Salad:
- 1 head romaine/iceberg lettuce chopped
- 1/4 lb chopped ham
- 1/4 lb chopped turkey
- 1/4 lb chopped hard salami
- 1/4 lb pepperoni
- 1 red onion sliced
- 2 tomatoes sliced
- 1 C shredded cheese (provolone or Swiss are best)

- Dressing:
- 3/4 c Olive oil
- 1/4 c tarragon vinegar
- 1/8 t pepper
- 1/2 t dried oregano
- 1 t salt
- 1/4 t garlic powder
" Ben's Chicken and Dumplings"

Fluffy clouds of homemade dumplings floating in a rich chicken broth
- For the Soup:
- 1 tablespoon olive oil
- 6-8 slices bacon, chopped into bite-sized pieces
- 1-2 carrots, thinly sliced
- 2 shallots, finely minced
- 4 cloves garlic, finely minced
- 8-9 cups chicken stock
- 3-4 sprigs rosemary or thyme
- 2 cups shredded chicken (either use leftovers, or simply boil chicken breasts in water for 15 minutes, then shred)
- For the Dumplings:
- 1 1/2 cups cake flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon ground black pepper
- 2 tablespoons unsalted butter, melted
- 1/2 cup buttermilk (or whole milk), well shaken
Breakfast Patty Melt

- 1 piece Toast (wheat, White, Sourdough, Rye, Cinnamon-raisin, Bagel, Etc)
- Spread Of Your Choice (mayo, Mustard, Ricotta, Honey, Cream Cheese, Herbed Cream Cheese, Peanut Butter, Nutella, Marshmallow Creme, Sriracha)
- Topping Of Your Choice (jam, Lettuce, Tomato, Cucumbers, Avocado, Scrambled Eggs, Fried Eggs, Banana Slices, Apple Slices, Strawberries, Etc)
