A quick way to have pulled pork, using lean pork tenderloin
- 2 Lb. Pork Tenderloin (about Two Pieces)
- 2 Tbsp Olive Oil
- 1 Onion, finely diced
- 2 Cloves Garlic, minced
- 1 Tsp Liquid Smoke
- 1 Cup Ketchup
- 2 Tbsp Brown Sugar
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Apple Cider Vinegar
- 1/4 Tsp Dry Mustard
- 1/4 Tsp Chili Powder
- 1 Tsp. Salt
- 1 Tsp. Pepper
- 1/2 Cup Water
- 6 Hamburger Buns
- Butter to Spread
- Barbecue Sauce
"Chinese Chicken Noodle Soup

Directions: In a large soup pot, heat the olive oil over medium high heat
- 2 Tablespoons Olive Oil
- 2 medium, boneless skinless chicken breasts, cut into thin strips
- Salt/Pepper to taste
- 4 cups chicken broth, low sodium if preferred
- 1 Tablespoon Oyster Sauce
- 2 Tablespoons soy sauce (low sodium if preferred, light or dark is fine!)
- 3 to 4 ounces Asian noodles of choice*
- 4 leaves Bok Choy, (Asian Cabbage), sliced into strips
- 3 green onions, diced
- 4 hard boiled eggs

- 2-3 Russet potatoes, approx. same size, each cut into 8 wedges
- 2 tablespoons butter, unsalted, melted
- 1 and 1/4 cup panko bread crumbs
- 1 tablespoon ranch dry seasoning
- 1/4 teaspoon cayenne pepper, ground
- 1/4 teaspoon seasoning salt

Instant Pot Low-Carb Goulash Soup with Ground Beef and Peppers

Instructions: Turn the Instant Pot to saute', heat the 2 tsp
- 1 1/2 - 2 lbs. extra lean ground beef (preferably less than 10% fat)
- 2 tsp. + 1 tsp. olive oil
- 1 large red bell pepper, stem and seeds removed and cut into short strips
- 1 large onion, cut into short strips
- 1 T minced garlic (minced garlic from a jar is fine)
- 2 T sweet paprika, preferably Hungarian paprika (I used Szeged Sweet Paprika)
- 1/2 tsp. hot paprika, preferably Hungarian paprika (I used Szeged Hot Paprika)
- (If you don't have hot paprika, use a little more sweet paprika and a pinch of Cayenne pepper.)
- 4 cups homemade beef stock (or use a little less than 3 cans beef broth - 14 oz. can)
- 2 cans (14.5 oz. can) petite diced tomatoes
