"Lemon Icebox Cheesecake"

{Note: Make sure your cream cheese is quite soft, otherwise you're going to wind up with lumps in your filling
- Crust:
- 10 lemon sandwich cookies
- 2 tablespoons unsalted butter, melted
- 1 teaspoon lemon zest
- Lemon Curd:
- 1 large egg plus 1 egg yolk
- 1/4 cup sugar
- pinch salt
- 2 tablespoons lemon juice
- 1 tablespoon unsalted butter
- 1 tablespoon heavy cream
- Filling:
- 1 envelope (2 3/4 teaspoons) unflavored gelatin
- 1/4 cup lemon juice (from about 2 lemons)
- 1 1/2 lb (3 8-oz packages) cream cheese, cut into 1-inch pieces and softened
- 3/4 cup sugar
- pinch salt
- 1 1/4 cups heavy cream, at room temperature

Strawberry Margarita Preserves

PREPARE boiling water canner
- 6 cups halved hulled strawberries (about 3-1/2 1 lb containers)
- 2 cups chopped cored peeled tart apples (about 2 medium)
- 1/4 cup lemon juice
- 4 cups granulated sugar
- 1/2 cup tequila
- 1/2 cup orange-flavored liqueur
- 2 Tbsp strawberry schnapps, optional

CHICKEN FAJITA QUESADILLAS

- 2 tbsp olive oil

- 3 chicken breasts, boneless and skinless
- 1 red bell pepper

20-Minute Chicken Pho

Instructions Bring a pot of water to a boil for your noodles
- 2 quarts chicken broth
- 1-inch piece of ginger, sliced
- 2 red chilies, sliced
- 1/4 cup fish sauce
- 1 tablespoon sugar
- 2 boneless, skinless chicken thighs or breasts, thinly sliced
- salt and pepper
- 2 tablespoons oil
- 12 oz. dried pho noodles
- A handful of fresh bean sprouts
- A handful of fresh mint

"Grandma's Chocolate Meringue Pie"

Bake pie shell. Mix sugar, cornstarch, cocoa and salt in saucepan

- 1 9-inch Baked Pie Shell
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 1/2 teaspoon Kosher salt

- 4 egg yolks, slightly beaten

- 4 egg whites (keep cold until ready for use for best results)
- 1/4 heaping teaspoon cream of tartar

- 4 cups (480 grams) 100% pure cane confectioners’ sugar, such as C&H® or Domino®, spooned into cup, leveled off & sifted
- 1/2 cup (120 ml) boiling Baileys® Irish Cream liqueur
- 2 teaspoons (10 ml) pure vanilla extract, such as Nielsen-Massey®
- 1/4 teaspoon (1.25 ml) pure almond extract, such as Nielsen-Massey®, optional
- 1/2 cup (1 stick/113 grams) salted butter, at room temperature
- 1/2 cup (1 stick/113 grams) unsalted butter, at room temperature
- 1 cup (192 grams) organic palm shortening, such as Spectrum®, at room temperature
Amish Onion Patties

Mix together dry ingredients add milk and stir batter will be thick add onions and mix throughly heat 1/2 inch oil
- 3/4 cup Gold Medal flour
- 1 tablespoon Domino sugar
- 1 tablespoon cornmeal
- 2 teaspoons Clabber Girl baking powder
- 2 teaspoons Morton salt ( adjust the salt to your family’s taste I only use 1 teaspoon)
- 3/4 cup TruMoo milk

- 1 1/2 pounds (700g) broccoli
- 2 tablespoons (30ml) vegetable oil
- Kosher salt and freshly ground black pepper
- 3 tablespoons (45g) unsalted butter
- 1 medium onion, sliced (about 6 ounces; 170g)
- 1 medium carrot, peeled and finely diced (about 4 ounces; 120g)
- 3 medium cloves garlic, thinly sliced
- 2 cups (475ml) water, or homemade or store-bought low-sodium chicken stock
- 3 cups (700ml) whole milk
- 1 small russet potato, peeled and sliced (about 4 ounces; 120g)
- 12 ounces (340g) sharp cheddar cheese, grated (see note above)
- 8 ounces (240g) deli-style American cheese, diced (see note above)
- 1 teaspoon (3g) mustard powder
- Dash of hot sauce, such as Frank's RedHot
