  • 1/4 cup sugar

  • 2 tablespoons lemon juice
  • 1 tablespoon unsalted butter
  • 1 tablespoon heavy cream
  • Filling:
  • 1 envelope (2 3/4 teaspoons) unflavored gelatin
  • 1/4 cup lemon juice (from about 2 lemons)
  • 1 1/2 lb (3 8-oz packages) cream cheese, cut into 1-inch pieces and softened
  • 3/4 cup sugar
  • pinch salt
  • 1 1/4 cups heavy cream, at room temperature
