Grilled Pineapple Sundae

1. In a small saucepan, combine the brown sugar, rum, and water
- 1/2 cup packed light brown sugar
- 2 tbsp. dark rum
- 2 tbsp. water
- 2 tbsp. fresh lime juice
- 1 tbsp. canola oil
- 1/2 pineapple, peeled, cored, cut into 1/2-inch thick slices
- 4 scoops Toasted Coconut Ice Cream or vanilla*
- Note: If you don't want to make coconut ice cream, Haagen-Dazs makes a pineapple coconut that works perfect for this sundae.
Bacon and Cheese Biscuits

Preheat oven to 350 degrees
- 2 tablespoons melted butter
- One roll refrigerated biscuit dough, 8 count
- 6 thin slices fresh mozzarella, 1/4-inch thick ( I used 1 cup of shredded Mozzarella)

- 1 cup shredded cheddar cheese
Cajun Gumbo

1. Season the chicken with salt and pepper
- 3 Boneless Chicken Breasts, cubed into 1" pieces
- 1 Lb. Andouille Sausage, cut into 1/4" slices
- 1 Lb. Medium Shrimp, peeled and deveined
- 1 Cup Oil + 1/4 Cup
- 1 1/2 Cups Flour
- 1 Large Onion, chopped
- 1 Green Bell Pepper, seeded and chopped

Shredded Beef and Gravy Roll

Set a large slow cooker onto high (4 hours) or low (6-8 hours)
- 1 1/2 - 2 kg beef roast, chuck, topside or blade.
- 1 cup chicken stock
- 1/2 cup balsamic vinegar
- 1 tablespoon soy sauce
- 1 tablespoon Worcestershire sauce
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 2 tablespoon szechuan pepper corns
- 1 x star anise
