Spicy Gochujang Beef Stew

Heat up a glug of oil in a small soup pot
- serves 4
- 400 g stew beef
- kosher salt and freshly ground black pepper
- oil
- 1 red onion, cut into 8ths (chunky, not finely chopped will do)
- 3 cloves garlic sliced
- 1 " piece of ginger, sliced
- 4 large, dried shiitake mushrooms, soaked in hot water to cover for 20 minutes
- 1 1/2 cup chicken stock
- 2 tbls soy sauce
- 1 tbls mirin
- 2 tbls gochujang
- 1 tsp sesame oil
- 1 large potato, 1/2" dice
- scallion, sliced for garnish

- Spicy Garlic Sauce:
- 1 pound skinless, boneless chicken breasts (about 2 large breasts), cubed into bite-size pieces
- Olive oil
- 2 cloves garlic, pressed through garlic press
- Zest of 1 lemon (about 1 tablespoon)
- 1 tablespoon lemon juice
- 1 teaspoon salt
- Pinch or two black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon coriander
- 1/4 teaspoon paprika
- 4 middle eastern-style flatbreads (you can use pita bread, as well)
- Arugula greens
- Sliced tomatoes
- 1/2 cup mayonnaise
- 1/2 cup sour cream or full-fat, plain Greek yogurt
- 3 cloves garlic, pressed through garlic press
- 1 tablespoon tahini
- 2-3 teaspoons sriracha (I used a lot more since I like mine spicy, so use your own judgement!)
- 1 teaspoon salt
- Pinch black pepper
- Pinch cayenne pepper (again, you can use more, if you like it spicier)
- 1/2 teaspoon lemon juice

- 1 T Steak Rub (I used my homemade Montreal Steak Seasoning, but you can use any brand)
- 1/2 cup finely chopped cilantro leaves (about 1 cup before chopping)
- 1/2 cup finely chopped flat leaf parsley leaves (about 1 cup before chopping)
- 2 T minced garlic
- 3 T fresh lemon juice
- 2 tsp. red wine vinegar
- 1 tsp. Aleppo pepper flakes (or use a smaller amount of cayenne pepper if you can't find Aleppo pepper)
