Mexican Cornbread

Place a seasoned cast iron skillet (or 8 inch round cake pan) in the oven and preheat to 350
- 1 + 1/2 cups self rising corn meal mix (white or yellow)
- 1 + 1/2 tablespoons sugar
- 1/2 teaspoon salt
- 3/4 cup shredded cheddar cheese (mild, medium, or sharp)
- 1/2 cup vegetable oil
- 1/2 cup chopped onion
- 1 tablespoon diced jalapeño, seeds removed
- 3/4 cup milk
- 1 egg
- 1/2 cup canned cream style corn*
"Vidalia Onion Strings with Horseradish Aioli

Instructions Peel and thinly slice the onion
- horseradish aioli:
- vegetable oil for frying (to a depth of at least 3 inches)
- 1 good sized Vidalia onion
- 1 1/4 cup buttermilk
- 1 1/2 cup AP flour
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 cup mayonnaise
- 2 Tbsp horseradish cream
- juice of 1/2 lemon
- a dash of salt
- lots of freshly cracked black pepper to taste
Salisbury Steak/Hamburgers with Belmont Sauce

- For the Steak or Burgers:
- 2 Lbs Ground Beef
- 1/4 Cup Green Pepper (chopped)
- 1/4 C Onion (chopped)
- 1 Handful Fresh Parsley (chopped)
- 1 Tsp Salt
- 1/4 Tsp Tabasco Sauce
- 1/2 Tsp. Thyme
- 4 Burger Buns (4 to 6)if making Hamburgers
- 1 cup seasoned flour if making Salisbury Steak
- Belmont Sauce:
- 3 Tbsp Butter (melt in Saucepan)
- Stir In:
- 1/2 C Catsup
- 1 Tbsp Lemon Juice
- 1 Tsp Wocestershire Sauce
- 1 Tsp Prepared Mustard
- 1 Tsp Tabasco Sauce
- 2 Tbsp Sherry Wine
- Sauteed Onions & Peppers:
- 3 Tbsp Butter
- 1 Medium Onion Sliced Thin
- 1/2 A Red Pepper Sliced Thin
- 1/2 A Green Pepper Sliced Thin
- 4 Cloves Garlic Minced

- 1/2 1/2 to teaspoon diamond kosher salt or to taste, this depends on how salty your bacon fat is

"Bloomin’ Loaded Baked Potatoes
