'Homemade Breakfast Sausage Recipe

Instructions Pre-ground pork at the supermarket is generally too fine for sausage
- 1.5 teaspoons fennel seed
- 1.5 teaspoons black peppercorns
- 1.5 teaspoon dried sage
- 1 teaspoon dried thyme

- 3/4 ¾ cups Sugar

"Katsu-don (Pork Cutlet and Egg on Rice)

Katsu-don (カツ丼), is a very filling main dish
- Tonkatsu:
- 2 x 110g (3.9oz) pork cutlet or loin , about 1.5cm (5/8") thick (note 1)
- Salt & pepper
- 1 tbsp flour
- 1 egg beaten
- 1/2 cup panko breadcrumbs
- Oil for deep frying
- Katsu-don:
- 2 tonkatsu made as above
- 1/2 onion sliced to 5mm (3/16") thick

- 2 x 1 cup of hot cooked rice in a large bowl
- Katsu-don Sauce:
- 100 ml (3.4oz) dashi stock
- 30 ml (1oz) soy sauce

- 2 cups Basmati rice, rinsed well
- 2 tablespoons butter or ghee
- 6 shallots, sliced
- 1 yellow onion, chopped

- 1/2 teaspoon ground turmeric
- 2 teaspoon sumac powder
- 1.5 cups dried cranberries

- 1/4 teaspoon saffron (soaked in 2 tablespoons hot water for 10 minutes)
