Japanese Basics: Dashi Stock

Dashi is the basic soup stock used in Japanese cooking
- 1 4 Inch , piece dried kombu
- A Good Handful of Bonito Flakes
- 4 C Cold Water, from the tap (you might consider filtering it if it is too hard or chlorinated)

1. Melt butter in a large saucepan or pot
- 2 lb (900g) boneless, skinless cooked chicken, shredded
- Salt and freshly ground black pepper, to taste
- 4 tablespoons unsalted butter, at room temperature
- 4 tablespoons all-purpose flour
- 2 cups chicken broth, good-quality
- 1/2 lb potato, cut into small cubes
- 1 medium yellow onion, peeled and diced
- 2 cloves garlic, minced
- 1/2 cup carrot, peeled and cut into small cubes
- 1/2 cup frozen pea or shelled fresh peas
- 1/2 cup frozen or fresh corn
- 1/2 cup chopped green beans, fresh or frozen
- Cayenne pepper, optional, to taste
- 2 tablespoons heavy cream
- 1 good quality puff pastry sheet, thawed
- 1 egg, beaten

- 3 1/4 about 3 1/4 pounds Russet or baking potatoes (about 4 medium/large potatoes)
- 1/4 cup (half of 1 stick) unsalted butter
- 1/4 cup all-purpose flour
- 2 or 3 cloves garlic, minced or finely pressed
- 6 cups 2% or whole milk
- 8 ounces extra-sharp cheddar cheese, grated and divided (don't use pre-grated cheese in ziptop bags because that cheese is resistant to melting and won't incorporate well)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper, or to taste
- 1 cup sour cream (I used reduced fat)
- 10 about 10 slices bacon, cooked and crumbled (I used pre-cooked bacon that cooks in microwave in about 1 minute to save time; yields about 1 cup crumbled bacon)
- 6 to 8 about 6 to 8 green onions, trimmed and sliced into small segments (yields about 3/4 cup)
"Chinese Noodle Soup

A simple, delicious Chinese noodle soup with a broth that tastes like what you get at Chinese restaurants
- Broth:
- 3 cups / 750 ml chicken broth (Note 1)
- 2 garlic cloves , smashed (Note 2)
- 1/3 " / 1 cm piece of ginger , sliced (optional, but highly recommended)
- 1 1/2 tbsp light soy sauce (or normal all purpose soy sauce)
- 2 tsp sugar (any)
- 1 1/2 tbsp chinese cooking wine (Note 3)
- 1/4 - 1/2 tsp sesame oil
- Toppings & Noodles:
- 6 oz / 180g fresh egg noodles (Note 5 for options)
- 2 large bok choy plus/or other vegetables of choice
- 1 cup shredded cooked chicken (or other protein of choice)
- 1 scallion / shallot , green part only finely sliced (optional garnish)

Preheat oven to 350 degrees, and generously spray a 9x5 inch loaf pan with cooking spray
- For the bread:
- 1/3 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 small orange, zested
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon pure orange extract
- 1/2 cup orange juice (I used bottled, I didn't bother juicing the orange that I zested)
- 1/2 cup buttermilk
- 2 cups all-purpose flour + 1 teaspoon, divided
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup cranberries, half of them coarsely chopped
- 1/2 cup chopped walnuts
- For the glaze:
- 1/3 cup orange juice
- 1 teaspoon lemon juice
- 3 tablespoons granulated sugar
