Plump, extra juicy, extra tasty rissoles! I usually make Beef Rissoles but these can be made with lamb, pork, chick...
- Rissoles:
- 1 small brown onion
- 1/2 cup panko breadcrumbs (or normal)
- 500 g / 1 lb beef mince (ground beef) (Note 1)
- 1 small zucchini
- 1 small carrot
- 1 egg
- 1 large garlic clove , minced
- 1/2 tsp dried thyme
- 1/2 tsp oregano (or sub with other favourite herbs)
- 1/2 tsp each salt and pepper
- 2 tsp Worcestershire Sauce
- Cooking:
- 1 - 2 tbsp oil
- Serving:
- Tomato Ketchup!
"Sweet Potato Pie (New)"

Method: for the crust: In a medium bowl, whisk together the flour, sugar and salt
- For the filling:
- 1 1/2 pounds sweet potatoes (1 or 2 depending on size), or 2 cups canned sweet potato puree
- 1 cup heavy cream

- 2 tablespoons blackstrap molasses
- 1/2 cup granulated sugar

'Southern Style Meatloaf

Preheat oven to 350 degrees F
- 1 tablespoon bacon drippings, cooking oil or butter
- 1-1/2 cups chopped onion
- 1/2 cup chopped bell pepper
- 1 tablespoon minced garlic
- 2 pounds ground chuck
- 1 teaspoon kosher salt
- 1 teaspoon freshly cracked black pepper
- 1/2 teaspoon Creole or Cajun seasoning (like Slap Ya Mama)
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1 teaspoon dried basil
- Pinch dry mustard
- 1/2 cup ketchup
- 1 teaspoon Worcestershire sauce
- 3 slices white bread
- 1/3 cup whole milk
- 2 large eggs, beaten
- 1/2 cup ketchup
- 1 teaspoon Creole or yellow mustard
- 1/2 teaspoon Worcestershire sauce

INSTRUCTIONS In a large mixing bowl, cream butter and 1 cup of sugar for 4 minutes, until light and fluffy
- Dulce de Leche Filling:
- 1 cup Butter, softened
- 1 cup Sugar (plus 1/2 cup for rolling)
- 1 Egg
- 2 teaspoons Vanilla Extract
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 teaspoons Cinnamon (to be mixed with remaining 1/2 cup of sugar for rolling)
- 1 Tablespoon Butter
- 1 - 13.4 ounce can Dulce de Leche (such as Nestle Dulce de Lechera)

- 1 (9 inch) deep dish pie crust, baked
- 1 1/2 cups sugar

- 2 cups sharp cheddar cheese, grated

- 1/2 pack of bacon, diced
- 1/4 cup onion, diced
- 1/4 cup bell pepper, diced
- 2 tablespoons sour cream
- 2 tablespoons butter
- 1 teaspoons creole seasoning
- 1 teaspoons black pepper
- 1 teaspoons garlic powder
- 1 teaspoons onion powder
- dash of hot sauce
- green onions to garnish

AU CHEVAL BURGER

Inspired by the single cheeseburger at Au Cheval in Chicago
- 2 lbs beef, with good marbling, at least 85/15 fat content (I used a rib eye steak, but you could go for a cheaper cut like chuck as well), cut into 1 inch cubes
- 1/4 cup mayonnaise
- 1/4 cup dijon mustard
- 4 burger buns
- 1 egg yolk
- 2 tsp water
- salt and pepper to taste
- 8 slices processed cheddar cheese, either store bought (e.g. Kraft cheddar singles) or homemade
- 1 whole dill pickle, sliced thin (I used McClure's garlic dill)
- 1/4 cup very finely diced red onion
