Mama Peggy’s Chocolate Pound Cake

Instructions Beat butter and shortening; add sugar and mix well
- 2 sticks margarine or butter
- 3 cups sugar
- 3 cups flour
- 1/2 tsp baking powder
- 2 tsp vanilla
- 1/2 cup Crisco
- 5 eggs
- 1/2 cup cocoa
- 1 cup sweet milk
- FOR ICING (OPTIONAL)
- 6 tsp cocoa
- 6 tbsp HOT canned milk (about 1/2 cup)
- 6 tbsp butter or margarine
- 3 cups powdered / confectioner's sugar
- 1 tsp vanilla
"Ben's Spaghetti Bolognese-USE THIS ONE

My everyday Bolognese recipe I make over and over again
- 1 1/2 tbsp olive oil
- 2 garlic cloves , minced
- 1 onion , finely chopped (brown, yellow or white)
- 1 lb / 500g mince / ground beef OR half pork, half beef (Note 1)
- 1/2 cup / 125 ml dry red wine (or sub with water or beef broth/stock)
- 2 beef bouillon cubes , crumbled (Note 2)
- 28 oz / 800g can crushed tomato (or tomato passata)
- 2 tbsp tomato paste
- 2 - 3 tsp white sugar , if needed (Note 3)
- 2 tsp Worcestershire sauce
- 2 dried bay leaves
- 2 sprigs fresh thyme (or 1/2 tsp dried thyme or oregano)
- Salt and pepper
- To Serve
- 400 g / 13 oz spaghetti
- Parmesan cheese and finely chopped parsley (optional)

- 1 pound medium-sized pasta shells, cooked according to package directions
- 1/2 cup unsalted butter (1 stick)
- scant 1/2 cup all-purpose flour
- 4 cups Silk Unsweetened Cashewmilk (or the milk of your choice)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon pepper, or to taste
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dry ground mustard, optional
- 3 cups (about 12 ounces) extra-sharp cheddar cheese, grated (grate your own because pre-grated cheese in bags doesn't melt well)

Chicken Tacos Recipe with Bacon

Cook bacon in a large skillet over medium heat, turning as necessary until fat has rendered and bacon is crispy
- 3 slices bacon
- 1 1/2 – 2 pounds boneless and skinless chicken breast
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground coriander
- 2 garlic cloves, minced
- 1/8 teaspoon cayenne pepper (add less/more based on how spicy you like your tacos)
- 1/4 cup chicken stock (substitute vegetable stock or water)
- Juice of half a lime
- Salt, to taste
- 10 Corn or flour tortillas, warmed

Preheat the oven to 375 degrees Fahrenheit
- 1 Roll of Filo Dough, thawed
- 2 and 1/2 Apples (use more if you're using a skillet or dutch oven larger than 7" diameter and 3" deep)
- 1/2 Cup Plus 2 Tablespoons Sugar
- 1/4 Cup Solid Butter plus 3 Tablespoons Melted Butter
