Hunan Beef with Peppers and Asparagus

Instructions In a medium bowl, combine all of the ingredients for the marinade
- For the marinade:
- 1 lb boneless beef short rib (recommended) or other steak, sliced into 1/4" thick slices
- 1 cup peanut oil for frying
- 1 Tbsp Shaoxing wine (or dry sherry)
- 1 tsp sea or kosher salt
- 2 tsp light soy sauce
- 2 tsp dark soy sauce
- 1 Tbsp potato starch (substitute for all-purpose flour at 1:1 ratio if necessary)
- 1 1/2 Tbsp water
- For the stir fry:
- 1 Tbsp minced ginger
- 5 garlic cloves, finely chopped or minced
- 2 Thai red chiles (Bird's Eye chiles), seeded and finely chopped (for mild heat)
- 1-2 tsp or more dried chili flakes (optional; 1-2 tsp for medium heat, 3+ tsp for more heat)
- Sea or kosher salt (to taste)
- 4 scallions, sliced about 1-inch long on the diagonal
- 8-10 asparagus spears, cut into 1-inch pieces on the diagonal
- 1/2 each red, green and yellow bell peppers, cut into 1-inch pieces
- 1 tsp sesame oil

Super crispy beef tossed with a sweet and sticky sauce – better than take out! TRY WITH ORANGE SAUCE!
- Beef Marinade:
- 1.5 lbs top sirloin steak (any type of beef works – flank steak, skirt steak)
- 1 cup corn starch (divided in half)
- 1 small onion
- 2 cloves garlic
- 4-5 slices of ginger (3cm x 3cm chunk)
- 1 tablespoon light soy sauce (reduced sodium)
- Sweet and Sticky Sauce:
- 1/2 cup + 4 tablespoons honey
- 1/4 cup + 2 tablespoons light soy sauce (reduced sodium)
- 1/2 cup water
- 1 tablespoon hoisin sauce
- 1/2 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon shaoxing cooking wine
- 5 teaspoons corn starch (for corn starch slurry thickener)
- 6 teaspoons water (for corn starch slurry thickener)
- Garnish & Toppings (Optional):
- 1-2 stalks green onion (chopped)

ENCHILADA SAUCE RECIPE

Add vegetable oil and flour to a medium saucepan over medium heat
- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 3 tablespoons chili powder
- 1 cup chicken stock
- 1 (28-ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon packed brown sugar
- 1/2 teaspoon Kosher salt
- 1 teaspoon ground black pepper

- 1 box Swiss Chocolate or German Chocolate Cake Mix
- 1 small box instant vanilla pudding
- 1 1/2 cups milk
- 3 eggs
- 3/4 cup oil

- 1 cup powdered sugar

- 5 tablespoons unbleached all-purpose flour
- 5 cups (1250 ml) unsalted chicken broth (or water)
- 1/4 cup whole milk (or 2%)
- 1 cup frozen green peas
- Dumplings:
- 3/4 cup all-purpose flour

- 1/2 teaspoon salt
