Makes a great dipping sauce for Spring Rolls or it can be added to a stir-fry dish at the end of cooking
- 4 tbsp chicken broth
- 2 tbsp red wine vinegar or Chinese red rice vinegar
- 2 tbsp sesame oil
- 2 tsp sugar
- 1/4 tsp chili paste, optional
- 2 tsp cornstarch
General Tso's Chicken

Pre-preparation (for frying the chicken): 1
- Ingredients (for Frying the Chicken):
- 1 Egg White, beaten
- 4 Tbsp. Cornstarch
- 2 Tbsp. Flour
- 1/2 Tsp. Salt
- 1 1/2 Tsp. Vegetable Oil
- 2 Tbs. Water
- 1 Lb. Boneless Chicken Thigh Meat, cut in 2 inch pieces (approx. 6 thighs)
- 2 Cups Vegetable Oil for Deep Frying
- Ingredients (for the Sauce Mixture):
- 3 Tbsp. Sugar
- 3 Tbsp. Light Soy Sauce
- 2 Tbsp. Dark Soy Sauce
- 1 Tbsp. Fermented Rice Sauce or Cooking Wine
- 1 Tbsp. White Vinegar
- 1 Tsp. Sesame Oil
- 1 Tbsp. Cornstarch
- 1/2 Cup Chicken Broth or Water
- 2 Tbsp. Vegetable Oil
- 2 Cloves Garlic, chopped
- 1 Tbsp. Shredded Ginger
- 1 Stalk Scallion, chopped
- 6 Red Hot Peppers, diced

Line an 8x8 inch square pan with parchment paper and grease it lightly
- 1 stick of salted butter (1/2 cup)
- 5 oz. can of evaporated milk (or 10 tablespoons if you only have a big can)
- 1/4 cup corn syrup
- 2 1/2 cups granulated sugar
- 7 oz. jar of marshmallow creme or 2 cups mini marshmallows
- 1 1/2 cups chocolate chips (I use semi-sweet)
- 1 tablespoon vanilla
