Filipino Pork BBQ

Prepare the pork as noted above
- Marinade:
- 3 Lbs Thin Cut Center Cut Pork Loin Chops, pounded until very thin (between 1/8-1/4 inch) and cut into 1 inch wide slices against the grain
- 1 Can 7-up (12 Oz.)
- 1/2 Cup Oil
- 3/4 Cup Soy Sauce
- 3/4 Cup Brown Sugar
- 3/4 Cup Ketchup or Banana Ketchup
- 6 Tbs. Lemon Juice (about 2 Lemons, squeezed)
- 8 Garlic Cloves, smashed
- 4 Big Scallions, chopped or 1 small-medium onion, chopped
- 1 Tsp. Kosher Salt
- Ground Black Pepper
- If You Like Spice, add 2 tsp. sriracha hot sauce or more, or 1-2 tbs. Frank's red hot sauce, or any chili sauce or fresh chilis.
- Basting Sauce:
- 1/2 Cup Seven Up
- 1/4 Cup Soy Sauce
- 1/4 Cup Ketchup
- 1/4 Cup Brown Sugar
- 2 Tbs. Lemon Juice
Ragu Alla Bolognese

*This recipe makes for quite a bit of sauce
- 1 Pound Ground Beef
- 1 Pound Mixed Ground Pork/beef
- 7 Oz Bacon or Pancetta
- 1 Large Onion
- 2 Celery Stalks
- 1 Medium Carrot
- 2 Garlic Cloves
- 2 Cans Diced Tomatoes (14 oz)
- 2 1/2 Tbsp Tomato Paste
- 1 C Milk
- 1 Tsp Salt
- 1/4 Tsp Ground Nutmeg
- 1/4 Tsp Pepper
- 3 1/2 Cups Beef Broth
- 2 1/2 Tbsp Freshly Chopped Basil
- 1 Pinch Dried Basil
- 2 Tbsp Butter
- 2 Tbsp Olive Oil
- Optional: 1 1/2 Cups Broth Can Be Replaced by Red Wine
"Fried Fish Sandwiches With Creamy Slaw and Tartar Sauce"

makes 4 sandwiches Toss cabbage and onion with 2 teaspoons kosher salt and lots of black pepper and set aside
- For the Slaw:
- 1 small head cabbage, finely shredded (about 1 1/2 quarts)
- 1/2 small red onion, thinly sliced (about 1/2 cup)
- Kosher salt and freshly ground black pepper
- 2 teaspoons cider vinegar
- 1 teaspoon dijon mustard
- 3 tablespoons mayonnaise
- 1 tablespoon sugar
- For the Tartar Sauce:
- 3 tablespoons mayonnaise
- 2 teaspoons sweet pickle relish
- 1 tablespoon capers, rinsed, drained, and chopped
- 1 teaspoon sugar
- 1 teaspoon dijon mustard
- For the Fish:
- 1 1/2 to 2 quarts peanut oil
- 1 1/2 cups all purpose flour
- 1/2 cup cornstarch
- Kosher salt and freshly ground black pepper
- 1 teaspoon baking powder
- 1/4 teaspoon paprika
- 12 ounces cod filet, cut into four 3-ounce portions
- 1 cup light beer
- 4 soft toasted burger buns

Heat the oven to 350°F: Set the oven to pre-heat and place a rack in the bottom third of the oven
- 1 cup torn-up bread pieces, or 1/2 cup bread crumbs
- 1/2 cup whole or 2% milk
- 1 small onion, diced small
- 1 small carrot, peeled and diced small
- 1 stalk celery, diced small
- 2-3 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 tablespoon tomato paste
- 2 pounds ground meat — beef, pork, veal, lamb or a mix
- 2 large eggs, beaten
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- Pepper to taste
- 1/2 cup ketchup, bbq sauce, or other sauce to coat (optional)
- 1/2 pound bacon (optional)

1. Combine all ingredients except pecans
- 2 (8 oz.) packages cream cheese, softened
- 1 small can crushed pineapple, drained
- 1/4 cup finely chopped green pepper
- 2 tbsp. finely chopped onion
- 1 tbsp. seasoned salt
- 2 cups chopped pecans, divided
- Note: This recipe makes 2 cheeseballs. Halve the ingredients if you want to make one.

- 1 envelope of dry ranch dressing mix
