"HOW TO COOK A PERFECT FROZEN STEAK

Instructions Preheat oven to 275 degrees
- 2 Frozen Steaks
- Cooking Oil
- Salt and desired steak flavor enhancer (see my recipe below)
- 1 tbsp olive oil
- 1/2 tsp worcestshire
- 1/4 tsp balsamic vinegar
- 1/4 tsp high quality liquid smoke (don’t let BBQ diehards ever talk you out of buying it)
- 1 tsp fresh ground pepper
- 1/4 tsp brown sugar
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 1/8 tsp paprika (smoked is best)
- 1/8 tsp cinnamon
- Dash of salt
APPLE & CHEDDAR PUPCAKES

1. Preheat oven to 400 degrees F
- 1 1/2 cups all-purpose flour
- 1/4 cup traditional rolled oats
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup applesauce
- 1/2 cup water
- 1/4 cup vegetable oil
- 2 tablespoons honey
- 2 eggs
- 1 apple, peeled, cored and minced
- 1 cup grated cheddar cheese

I don’t believe in sandwiches without mayo, seems unfair to the bread
- Olive salad:
- 1 6-ounce can whole green olives
- 1 6-ounce can whole black olives
- 1 2-ounce jar pimentos
- 2 cloves garlic
- 1/2 cup extra-virgin oil olive
- 1/3 cup red wine vinegar
- 1/4 cup flat leaf parsley
- 1/4 cup fresh oregano, chopped
- juice of half lemon
- salt and pepper, to taste
- Sandwich:
- 1 large round Italian bread (or French bread)
- 8-ounces sliced soprraessata, hard salami, capicola, pastrami, mortadella, prosciutto (Pick 3)
- 8-ounces sliced provolone, mozzarella and Swiss cheese
Ding Dong Cake

Chop chocolate so no pieces are larger than a chocolate chip
- For the Cake:
- 3 ounces semi sweet baking chocolate (you can use chocolate chips)
- 1 1/2 cups brewed coffee
- 3 cups sugar
- 2 1/2 cups all purpose flour
- 1 1/2 cups unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 eggs
- 3/4 cup vegetable oil
- 1 1/2 cups buttermilk, room temperature
- 1 teaspoon vanilla
- For Cream Filling:
- 5 tablespoons all purpose flour
- 1 cup milk
- 1 teaspoon vanilla
- 1 cup butter
- 1 cup granulated sugar
- For the Ganache:
- 1 12 ounce bag semi-sweet chocolate chips
- 1 cup heavy cream
- 1 tablespoon butter

Stir yeast into warm water to dissolve
- 1 package yeast
- 2 cups warm water
- 3/4 cup oil
- 4 cups self rising flour
- 1/4 cup sugar

Mix the water,eggs, sour cream, and vanilla with paddle attachment then add the other four ingredients
- Ingredients:
- I sometimes double the recipe, and the batter half way fills 2 – 8×2″ pans and 2 – 10×2″ pans. That gives me a great 2 tiered cake with enough cake top to level off.
- 1 box white cake mix
- 1 cup sugar
- 1 cup flour
- 1/8 tsp salt
- 1 1/3 cups water
- 3 eggs
- 1 cup sour cream
- 1 tsp vanilla
German Chocolate Pie

In a small saucepan, melt the chocolate and margarine over low heat, stirring to mix well
- 4 ounce package German Chocolate (on baking aisle)
- 4 tablespoons margarine (1/2 stick) - can sub butter
- 12 ounce can evaporated milk
- 1 +1/2 cups sugar
- 3 tablespoons cornstarch
- 1/8 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 1 unbaked, deep dish pie shell
- 1/2 cup chopped pecans
- 1 +1/3 cup sweetened, flaked coconut
Avgolemono Soup

Heat the stock and water in a large soup pot to simmering
- 2 about 2 cups leftover cooked rice
- 1 quart chicken broth
- 2 cups water
- 2 cups cooked white meat chicken, cut in chunks
- 3 eggs, well beaten
- 1/3 about 1/3 cup fresh lemon juice
- salt and fresh pepper
- snipped chives or parsley
Spam Fried Rice

I actually prefer fish sauce instead of soy sauce in my fried rice
- 3 Cups Rice, cooked, cold, chunks broken up so grains are loose & separate
- 1/2 Can Spam, cut into small dice
- 2 Eggs, beaten
- 2 Stalks Green Onion, minced
- 1 Tsp Minced Garlic
- 1 Tsp Grated Fresh Ginger
- 2 Cups Fresh Spinach Leaves, finely chopped
- 1 Tbl Chinese Rice Wine (or Dry Sherry)
- 2 Tsp Soy Sauce (or 1 Tsp Fish Sauce)
- Freshly Ground Black Pepper

- 3 cups store bought, unsweetened apple juice
- 4 Tbsp Ball® RealFruit™ Classic Pectin

- 3 cups granulated sugar
