Featherlight Pancakes

Mix together dry ingredients
- 1 cup all-purpose flour
- 2 Tablespoons baking powder
- 2 Tablespoons sugar
- 1/2 teaspoon salt
- 1 egg
- 1 cup milk
- 2 Tablespoons oil
Lanzhou Beef Noodle Soup

Rinse the soup bones and pat dry
- You’ll need:
- 4 lbs beef or pork soup bones
- 2 1/4 lbs (1 kg) beef shank
- 1/2 of a whole roasting chicken (or a leftover roasted chicken carcass)
- 10 cups water
- 4 cups (about 1 liter) chicken stock
- Spice mix (see recipe below)
- Salt, to taste (I added about a tablespoon)
- 1/2 of a small Chinese radish, quartered and thinly sliced
- 1 lb fresh or dried white noodles (they can really be any thickness, as long as they are wheat-based noodles rather than rice noodles, and have a nice chew when cooked)
- Hot chili oil, to taste (see recipe below)
- chopped scallion
- chopped cilantro
- For the spice mix:
- 7 star anise
- 12 cloves
- 1 cinnamon stick
- 5 bay leaves
- 6 large slices of ginger
- 1 1/2 teaspoons fennel seeds
- 1 teaspoon cumin seeds
- 2 teaspoons Sichuan peppercorns
- 1 1/2 teaspoons white peppercorns
- 5 licorice root slices (if you can’t find these, you can leave them out)
- 3 pieces dried orange peel
- 1 black cardamom
- For the hot chili oil:
- 3/4 cup oil
- 2 star anise
- 1/2 of a small cinnamon stick
- 1/2 teaspoon Sichuan peppercorns
- 3 tablespoons crushed red pepper flakes (just the regular kind you’d sprinkle on your pizza)
- 1 teaspoon salt
- 1/4 teaspoon sugar
Blackberry Crumble

Sprinkle blackberries with white sugar and mix well
- 3 cups fresh blackberries (could use frozen) or enough to cover the bottom of an 8 x 8 inch baking dish
- 1/2 cup white granulated sugar
- 1 cup quick-cooking oats
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1 stick or 8 tablespoons or 1/2 cup butter
- 3/4 cup all-purpose flour
Pulled Pork BBQ in the oven Recipe

Instructions Wash the Boston Butt under cold running water, pat dry with paper towels
- Dry Rub:
- 1 Boston Butt or picnic, about 8-10 lbs in weight.
- Worcestershire Sauce
- Liquid Smoke
- Yellow Mustard
- 2 Tablespoon Kosher Salt
- 2 Tablespoon Lemon Pepper Seasoning
- 2 Tablespoon Paprika
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Cayenne Pepper
- Place all spices in a jar and shake well. Store any leftovers in a tightly closed jar.
- Eastern NC BBQ Sauce:
- 2 cups Apple Cider Vinegar
- 1 cup Water
- 1 Tablespoon Texas Pete Sauce, or favorite hot sauce
- 1/2 cup Brown Sugar
- 1 Tablespoon Red Pepper Flakes
- 1/2 teaspoon Black Pepper
- 1 teaspoon Salt
- Place all ingredients in a sauce pot and bring to low simmer, let simmer 20 minutes, remove from heat.
