Salted Peanut Chews

Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside
- Crust:
- 1 cup all-purpose flour
- 1/4 cup confectioners sugar
- 1/4 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- Middle:
- 2 about 2 heaping cups marshmallows (most of one 10-ounce bag; I used large marshmallows, use mini if you prefer bars not as thick)
- Topping:
- one 10-ounce bag peanut butter chips
- 1/3 cup light-colored corn syrup (not 'lite')
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract
- 1 1/2 cups Rice Krispies or similar crispy rice cereal
- 1 1/2 cups salted peanuts or salted honey roasted peanuts
Cajun Potato Salad

From the Kitchen of Deep South Dish
- 3 slices bacon, cooked crisp and chopped,
- set aside for garnish
- 3 pounds of potatoes
- 3 large eggs
- 2 large pinches of kosher salt for the water pot
- 1 tablespoon of liquid crab boil
- Kosher salt and fresh cracked black pepper, or to taste
- 1 teaspoon of big flake Cajun/Creole seasoning,
- or to taste, plus extra for garnish (see note)
- 1/2 cup of chopped onion
- 1/4 cup of chopped celery
- 1/2 cup of chopped, green pepper
- 1 cup of real mayonnaise
- 1 tablespoon of spicy mustard, or to taste
- 1 tablespoon of Chow Chow relish, optional
- 1 green onion, sliced, for garnish
"Roasted Pork Tenderloin Recipe with Apples"

The trick to flavorful and moist pork tenderloins is to sear the pork before roasting
- 2 (1- to 1-1/2-pound) pork tenderloins
- 2 tablespoons vegetable oil, plus more as needed
- 1 1/2 teaspoons salt, plus more as needed
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh thyme leaves
- 1/4 teaspoon ground black pepper
- 2 apples, cored and sliced (We use Granny Smith, Pink Lady or McIntosh)
- 2 onions, sliced
- 1 cup chicken stock
- 1 tablespoon butter
Creamed Corn

- 32 ounces frozen whole kernel corn (2-16 ounce packages)
- 1 stick butter (1/2 cup)
- 1 cup Whipping cream
- 1 tablespoon sugar

Grilled Bone-In Chicken Breasts

- Orange-chipotle Glaze:
- 1/3 Cup Table Salt
- 6 Chicken Breast Halves, bone in and skin-on(about 12 ounces each), ribs removed, trimmed of excess fat and skin (see note)
