1. Prepare pie crust and set aside
- 1 pie crust
- 3 cups hot water
- 2 cups granulated sugar, divided
- 1 t. salt
- 1 t. all purpose flour
- 3 t. cornstarch
- 1 t. grated lemon zest
- 1/2 cup lemon juice
- 5 egg yolks
- 1 t. butte, melted
- 1 (8-oz) package cream cheese
- 1/2 cup powdered sugar
- 5 egg whites
- 1 t. vanilla extract

- 6 - 8 medium sized potatoes
- 1 egg
- 1/2 cup milk
- cracker crumbs
- 1/2 cup melted butter
