- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups confectioners' sugar
- 2 tablespoons plus 2 teaspoons water
- 4-1/2 teaspoons meringue powder
- 1/4 teaspoon cream of tartar
Puree of Cauliflower Soup with blue cheese and bacon

Cook bacon in a large pot over medium-high heat until crisp, about 8 minutes
- 2 strips bacon, halved on the bias
- 1/2 cup minced shallots
- 1/4 cup diced celery
- 6 cups cauliflower florets, divided (about 1 head)
- 1 cup peeled and diced russet potato
- 3 cups vegetable broth
- 3 cups whole milk
- 1 bay leaf
- 4 sprigs fresh parsley
- 4 sprigs fresh thyme
- 2 oz. blue cheese, crumbled

Easy Cheesy Potato Casserole

Heat oven to 350 degrees. Spray a 2-quart casserole with cooking spray
- 1 28-ounce package frozen potatoes O'Brien with peppers and onions, thawed
- 1 10.75-ounce cream of mushroom soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 cup sharp Cheddar cheese, shredded
- 1 cup Swiss cheese, shredded
- 1 cup Muenster cheese, shredded
- 2 T. dry Panko breadcrumbs
- 2 t. melted butter
Balsamic-Roasted Sweet Potatoes
