Chicken Dijonnaise

Place each chicken breast half between 2 pieces of plastic wrap
- 4 skinless, boneless chicken breast halves (about 1-1/4 to 1-1/2 pound total)
- 1/4 cup all-purpose flour
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons chopped green onion
- 1/3 cup whipping cream
- 3 tablespoons dry white wine or chicken broth
- 3 tablespoons Dijon-style mustard
- Fresh thyme sprigs (optional)
Salami and Pickle Grilled Cheese

- 12 ounces Gruyère, Swiss cheese, or sharp cheddar, sliced, divided
- 8 slices sourdough bread
- 6 dill pickles, sliced crosswise 1/4 inch thick

- 2 (10 ounce) cans enchilada sauce
- 1 (16 ounce) can chili beans, drained
- 1 (15.5 ounce ) can great Northern beans, drained
- 1 (15.25 ounce) can corn, drained
- 1 (14.5) ounce can fire-roasted tomatoes
- 1 T. ground cumin
- 1/2 t. salt
- 2 cups shredded Monterrey Jack dheese with peppers
- Garnish: sour cream, shredded Monterrey Jack cheese with peppers
Sour Cream Potato Salad

1. Pour Italian dressing over warm potatoes; cover and refrigerate for 2 hours
- 1/2 cup Italian Salad Dressing
- 7 medium potatoes, cooked in jackets and peeled and sliced (about 6 cups)
- 3/4 cup sliced celery
- 1/3 cup sliced green onion
- 4 hard cooked eggs
- 1 cup mayonnaise
- 1/2 cup sour cram
- 1 1/2 t. prepared horesradish mustard
- Salt
- Celery seed
Tuna Croquettes

- White Sauce:
- 1 can tuna
- 1 cup fine cracker crumbs
- light salt and pepper
- 2 T. flour
- 2 T. melted butter
- 1/2 cup milk
- 1 egg, separated
Turkey Focaccia Club

This sandwich is pure heaven thanks to the cranberry-pecan mayo
- For the Mayonnaise:
- 1/2 cup mayonnaise
- 1/2 cup whole berrry cranberry sauce
- 2 T. chopped pecans
- 1 T. honey
- Sandwich:
- 1 loaf (8 ounces) focaccia bread
- 3 lettuce leaves
- 1/2 pound thinly sliced cooked turkey
- 1/4 pound sliced Gouda cheese
- 8 slices tomato
- 6 bacon strips, cooked
Do-Ahead Chicken Enchiladas

1. Preheat oven to 350 degrees
- 1 (6.8 ounce) box Spanish rice
- 1 cup chopped onion
- 1 (15.5 ounce) can pinto beans, drained
- 1 (8-ounce) package cream cheese, softened
- 2 (8-ounce) blocks Monterey Jack cheese with peppers, shredded and divided
- 1 (8-ounce) block Colby-Jack cheese, shredded
- 1/4 cup minced fresh cilantro
- 1 T. fresh lime juice
- 2 T. ground cumin
- 2 t. ground coriander
- 1/2 t. salt
- 4 cups shredded cooked chicken
- 16 burrito-size flour tortillas

- 1 pound bacon, chopped
- 2 3-ounce packages cream cheese, with chives
- 1 cup sour cream
- Ground pepper
- 1/3 cup chopped scallions
- 1/2 cup slivered almonds, toasted
Baked Crab Dip

It looks fancy but is easy to make
- 1 (8-ounce) package cream cheese, softened
- 2 cups (16 ounces) sour cream
- 2 (6-ounce) cans crabmeat, drained, flaked and cartilage removed or 2 cups flaked imitation crabmeat
- 2 cups (8 ounces) shredded cheddar cheese
- 4 green onions, thinly sliced
- 2 round loaves (1 pound each) unsliced sourdough or Italian bread
- Additional sliced green onions, optional
- Assorted fresh vegetables, crackers
Hawaiian Pork Chops

Preparation: In a skillet, brown pork chops in butter over medium-high heat
- 4 Boneless Pork chops
- 2 tablespoons Butter
- 1 9-oz can Pineapple in syrup
- 1/4 cup Green pepper chopped
- 1/4 cup Apple Cider Vinegar
- 1/2 cup Ketchup
- 1 tablespoon Soy sauce
- 3 tablespoons Brown sugar
- Hot cooked rice
