Eight-Layer Casserole

In a large skillet, cook beef until brown
- 1 pound ground beef
- 2 8 - ounce can tomato sauce
- 1 teaspoon dried basil, crushed
- 1/2 teaspoon sugar
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup dairy sour cream
- 1 8 - ounce package cream cheese, softened
- 1/2 cup milk
- 2 tablespoons chopped onion
- 6 ounces noodles, cooked and drained
- 1 10 - ounce package frozen chopped spinach, cooked and well-drained
- 1 cup shredded cheddar cheese (4 ounces)
Can Can Grilled Chicken

In a small bowl, mix the first seven ingredients
- 1 tablespoon kosher salt
- 1 teaspoon sugar
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon ground mustard
- 1 broiler/fryer chicken (3-1/2 to 4 pounds)
- 1 can (12 ounces) beer
Halloumi with Olives and Thyme

Halloumi has a firm, squeaky texture and high melting point and tastes like a mild feta cheese
- 1 tablespoon olive oil, plus more
- 1 8.8-ounce package Halloumi cheese, cut into 1-inch pieces
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon crushed red pepper flakes
- 1 cup oil-cured black olives, pitted
Spinach Salad with Apples and Bacon

For the salad, cook bacon in a non stick skillet until crisp; transfer to a paper towel lined plate
- For the Salad:
- 12 strips applewood smoked bacon, diced
- 1 1/4 cups thinly sliced shallots
- 1 T. olive oil
- 2 Pink Lady apples, sliced
- 1 pkg. fresh baby spinach (5 oz. 8 - 10 cups)
- 6 hard cooked eggs, quartered
- For the Vinaigrette, Whisk:
- 1/3 cup apple juice
- 2 T. cider vinegar
- 2 T. honey
- 1 T. Dijon mustard
- 1/3 cup olive oil
- salt and black pepper to taste
- Roasted walnuts
Cheesy Ham Chowder

- 10 bacon strips, diced
- 1 large onion, chopped
- 1 cup diced carrots
- 3 tablespoons all-purpose flour
- 3 cups milk
- 1-1/2 cups water
- 2-1/2 cups cubed potatoes
- 1 can whole kernel corn, 15-1/4 ounces, drained
- 2 teaspoons chicken bouillon granules
- Pepper to taste
- 3 cups shredded cheddar cheese, 12 ounces
- 2 cups cubed fully cooked ham
Pickle Poppers

- 12 whole baby dill pickles
- 1 8 ounce cream cheese, softened (1/2 cup)
- 2 ounces cheddar cheese, finely shredded
- 1 – 2 jalapeno peppers, seeded and finely chopped
- ¼ teaspoon garlic powder
- Salt and pepper to taste
- 12 thin slices deli ham or turkey, halved
- 2 tablespoons jalapeno jam or hot pepper jelly (optional)
White Bean Turkey Chili

In a large stockpot or Dutch oven, melt butter over medium-high heat
- Ingredients
- 1/4 cup butter
- 2 onions, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 (32-ounce) cartons chicken broth
- 2 (15.5-ounce) cans great Northern beans, rinsed and drained
- 4 (4.5-ounce) cans diced green chiles
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 2 teaspoons dried crushed oregano
- 1 teaspoon garlic salt
- 4 cups shredded mozzarella cheese
- 2 cups heavy whipping cream
- 4 cups shredded Slow-Cooker Turkey (recipe follows)
- Garnish: fresh cilantro leaves, sliced red onion

- 2 ¼ teaspoons cracked black pepper
- ½ teaspoon salt
- 12 ounces boneless beef sirloin steak
- 1 cup grape tomatoes
- 1 red onion, cut into 1-inch-thick wedges
- 1 tablespoon olive oil
- 1 5 ounce spring mixed greens
