Crispy Cinnamon Coins

1. Cream butter in a bowl with a mixer until smooth
- 1 stick unsalted butter, softened
- 1/4 cup sugar
- 1 egg
- 1 t. ground cinnamon
- 1/4 t. vanilla extract
- 1/8 t. saly
- Minced zest of 1/2 of a lemon
- 1 1/4 cups all purpose flour
- 1/3 cup cinnamon chips, coarsely chopped
- Turbinado sugar or coarse sugar
Pineapple-Chicken Stir Fry

In a wok or large skillet, heat 2 teaspoons of the oil over medium-high heat
- 1 medium red onion, halved lengthwise and sliced
- 2 teaspoons vegetable oil
- 3/4 cup thin, bite-size strips zucchini
- 3/4 cup trimmed fresh pea pods, tips and strings removed
- 2 teaspoons vegetable oil
- 2 skinless, boneless chicken breast halves (12 ounces total), cut into thin bite-size strips
- 1 cup fresh pineapple cubes
- 3 tablespoons bottled stir-fry sauce
- Brown rice (optional)
- Fresh pineapple wedges (optional)
Hot Chili Corn Dip

Heat a grill on medium heat
- 5 ears fresh corn, shucked
- 1/2 stick (4 tablespoons) butter
- 2 cloves garlic, minced
- 2 jalapenos, seeded and diced finely
- 1 medium onion, diced
- 1 green bell pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 2 cans diced green chiles
- 1 1/2 cups grated pepper-jack cheese
- 8 ounces cream cheese, softened.
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 3 green onions, sliced thin.
- Tortilla chips or pita crisps, for serving

- 1/4 cup butter, softened
- 1/4 cup sugar
- 1/4 cup packed brown sugar
- 1 tablespoon water
- 1 teaspoon vanilla extract

- 1/2 cup chopped onion (1 medium)

- 1 can (20 ounces) unsweetened pineapple tidbits
- 1 pork tenderloin (1-1/4 pounds)
- 3 tablespoons brown sugar, divided
- 2 tablespoons Dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon ground ginger
- 1/3 cup finely chopped sweet red or green pepper
- 1/4 cup chopped green onions
- 1/8 teaspoon crushed red pepper flakes, optional
Lemon Supreme Pie

Line unpricked pie shell with a double thickness of heavy-duty foil
- LEMON FILLING:
- Frozen deep-dish pie shell
- 1-1/4 cups sugar, divided
- 6 tablespoons cornstarch
- 1/2 teaspoon salt
- 1-1/4 cups water
- 2 tablespoons butter
- 2 teaspoons grated lemon peel
- 4 to 5 drops yellow food coloring, optional
- 1/2 cup lemon juice
- CREAM CHEESE FILLING:
- 2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
- 3/4 cup confectioners' sugar

Ham and Lentil Stew

Brown ham in oil in batches in a large pot over medium-high heat; transfer to a plate and set aside
- 1/2 pound ham, diced
- 2 T. olive oil
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrot
- 2 t. minced garlic
- 1/2 pound dry brown lentils
- 1/4 cup dry sherry
- 5 cups low sodium chicken broth
- 2 cups diced tomatoes
- 2 t. minced fresh thyme
- 2 cups chopped fresh spinach
- Salt and black pepper to taste
- 1 T. red wine vinegar
- Crumbled goat cheese
Bacon Cheese Balls

- 1 cup shredded cheddar cheese
- 8 chopped bacon slices
- 1 T. dijon mustard

- 2 T. sweet Hungarian paprika, divided
- 1 t. each kosher salt and black pepper
- 1 1/2 lb. sirloin steak, trimmed, sliced into 2-inch strips
- 4 strips bacon, diced (4 oz.)
- 2 T. olive oil
- 1 cup sliced onion
- 1 T. minced garlic
- 1 T. tomato paste
- 1 t. caraway seeds
- 2 cups beef broth
- 1/2 cup sliced roasted red pepper
