Eggplant Parmesan

- Eggplant:
- 2 large eggs, lightly beaten
- 1 tablespoon water
- 2 cups whole-wheat panko (Japanese breadcrumbs)
- 1/4 cup (1 ounce) grated fresh Parmigiano-Reggiano cheese
- 2 (1-pound) eggplants, peeled and cut crosswise into 1/2-inch-thick slices
- Cooking spray
- 1/2 cup torn fresh basil
- 1/4 cup (1 ounce) grated fresh Parmigiano-Reggiano cheese
- 1/2 teaspoon crushed red pepper
- 1 1/2 teaspoons minced garlic
- 1/4 teaspoon salt
- 1 (16-ounce) container part-skim ricotta cheese
- 1 large egg, lightly beaten
- Remaining ingredients:
- 1 (24-ounce) jar premium pasta sauce
- 1/4 teaspoon salt
- 8 ounces thinly sliced mozzarella cheese
- 3/4 cup (3 ounces) finely grated fontina cheese
Watergate Salad

COMBINE first 4 ingredients in large bowl
- 1 can (20 oz.) crushed pineapple in juice, undrained
- 1 pkg. (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
- 1 cup JET-PUFFED Miniature Marshmallows
- 1/2 cup chopped PLANTERS Pecans
- 1-1/2 cups thawed COOL WHIP Whipped Topping
Glazed Apple-Maple Blondies Recipe

Preheat oven to 350°
- GLAZE:
- 1-1/3 cups packed brown sugar
- 1/2 cup butter, melted and cooled
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 3 cups chopped peeled apples (about 3 medium)
- 1/4 cup butter, cubed
- 1/2 cup maple syrup
- 1/4 cup packed brown sugar
Almond Cake

Directions Preheat oven to 350 degrees F
- 1/2 cup fine yellow cornmeal
- 1/2 cup cake flour
- 1 teaspoon baking powder
- 1 stick (4 ounces) unsalted butter, softened
- 1/4 cup almond paste, cut into half-inch pieces
- 1 1/4 cups confectioners' sugar, plus more for dusting
- 1/2 teaspoon pure vanilla extract
- 2 eggs
- 4 egg yolks
- 1/4 cup sour cream

Whisk together the soy sauce, brown sugar, water, garlic, onion, ginger, black pepper, oregano, red pepper flakes, ...
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/2 cup water
- 2 cloves garlic, minced
- 1 onion,chopped
- 2 tsp grated fresh ginger root
- 1 tsp ground black pepper
- 4 tsp dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/2 teaspoon ground cayenne pepper (optional)
- 1/2 teaspoon ground paprika (optional)
- 2 1/2 pounds skinless chicken thighs
Broccoli Salad

Mix it all together, let marinate for a while
- chopped fresh broccoli
- yellow / red / green bell peppers
- tomatoes (the little grape tomatoes would be great at this time of the year) I use dehydrated tomatoes in the winter
- feta cheese
- I used a home-made "Good Seasons" dressing which to me made the salad just wonderful
- follow directions except for one thing...for vinegar, I use half balsamic and half apple cider

Directions In medium bowl, stir together blackberries and sugar
- 2 1/2 cups fresh or frozen (thawed and drained) blackberries (do not use blueberries)
- 1 cup sugar
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup butter, melted
- Ice cream

- 3/4 cup white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon

- 3/4 cup milk
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1 tablespoon shortening
- 1 cup confectioners' sugar
- 2 tablespoons hot water
- 1/2 teaspoon almond extract
