Mediterranean Tuna Lettuce Wraps

Combine drained tuna, bell pepper, onion, mayo and olives, season with salt and pepper
- 1 (3 oz.) packages Bumble bee premium albacore tuna in water pouch
- 3 TBS chopped,roasted red bell pepper
- 2 large Bibb lettuce leaves
- 2 TBS Red onion
- 3 pitted Kalamata olives, sliced
- 1 TBS light mayo
- Pinch Sea salt and pepper
Pumpkin Cinnamon Roll Bake

Preheat oven to 375F. Line a 9x9-inch pan with foil and spray with cooking spray; set aside
- two 8-count tubes refrigerated cinnamon roll dough, with icing (I used Pillsbury Cinnabon Reduced Fat)
- 3 large eggs
- 3/4 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup milk (I used unsweetened cashew milk)
- 1/2 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 1 tablespoon pumpkin pie spice
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt, or to taste
- 1 cup confectioners' sugar
- 2 tablespoons cream or milk (I used unsweetened cashew milk)
- vanilla ice cream or whipped topping, optional for serving

Heat the oven to 350ºF with a rack in the middle position
- 149 grams (¾ cup) white sugar, divided
- 2 teaspoons grated lemon zest, plus 1 tablespoon lemon juice
- 1 16-ounce container (2 cups) whole-milk ricotta
- 1 8-ounce container (1 cup) mascarpone
- 43 grams (¼ cup) semolina flour, plus more for pan

- 2 (8 ounce) packages cream cheese
- 1 cup white sugar
- 1 teaspoon vanilla extract

- 1/4 cup white sugar
- 1 teaspoon ground cinnamon
Crispy Barbequed Tofu Slices

- 1 (16 ounce) package extra firm tofu
- 3 tablespoons olive oil
- 1 egg white
- 1 tablespoon barbeque sauce
- 1 cup all-purpose flour
- 1 teaspoon salt

In a large soup pot, heat oil over medium heat
- 1 onion, chopped
- 1/4 cup olive oil
- 2 carrots, diced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 teaspoon dried basil
- 1 (14.5 ounce) can crushed tomatoes
- 2 cups dry lentils
- 8 cups water
- 1/2 cup spinach, rinsed and thinly sliced
- 2 tablespoons vinegar
- salt to taste
- ground black pepper to taste
